Why we love this recipe ❤️
Of all the many soup recipes I have on this site (and I have 88 – I just counted), I think the ones I make in the slow cooker are my favorites. There is something about the low and slow process of simmering gently all day long that gives soups and stews such a rich, homey flavor.
And while I love all my soup recipes a whole lot of love, there is something about good old chicken noodle soup that is extra comforting. So when you put chicken noodle soup together with a slow cooker…let’s just say we have reached Ultimate Soup Happiness.
What is a slow cooker? 🥘
A slow cooker is a countertop cooking pot with a ceramic interior pot that sits inside a metal exterior. That outside piece has an electric heating element that cooks food at super low temperatures, usually ranging from 170 to 280 degrees Fahrenheit. Because of that low heat slow cookers take from 4 to 10 hours to cook whatever they are cooking
Why is all this so great? SO MANY REASONS. The lower temperatures and long cooking time is great for making meat and poultry fall-apart tender. The slow and steady cooking process produces rich flavors in all kinds of soups and stews.
And (one of my favorite parts) you can toss everything in the slow cooker in the morning, go about your day and when dinnertime rolls around…it’s ready!

- Chicken: We like chicken breasts for this soup but you can also use chicken thighs…one way or the other make sure they are boneless.
- Chicken Broth: As always, we think the kinds in the box are more flavorful than the canned variety, but either will work.
- Noodles: You want the super thin noodles so they will cook at the low slow cooker heat. Look for them near the egg noodles in the pasta aisle.

How to make this recipe 👩🏻🍳

STEP 1: When you get up in the morning, put some boneless chicken breasts, some carrots and celery and onion and some chicken broth in your trusty slow cooker and push the Low button. Go about your day for the next 8 hours.

STEP 2: Now scoop out the chicken and pour in some of those super thin egg noodles. Stir them in, push the HIGH button and while the noodles are cooking you are going to be shredding the tender chicken into bite sized pieces.

STEP 4: After about 15 minutes the noodles should be cooked…and by cooked, I mean they will have almost melted in to the soup. This gives it a lovely, creamy, thick consistency that we love. Once the noodles are tender, put the shredded chicken back in the soup, season it to taste with salt and pepper.

STEP 4: Now all that’s left to do is ladle it out into your favorite bowls!
Recipe FAQs 🧐
You can, you just have to adjust things a little because the thin noodles cook pretty quickly in the slow cooker – other types of noodles are more dense. If you prefer something like elbow noodles or bow-ties either cook them separately and stir them in, or add them after the soup is done and cook on high for another 15-20 minutes or until done.
You can! You will need between three and four pounds (to account for the weight of the bones) and we do find that it is easier to shred boneless chicken, but if you prefer bone-in chicken it will work!
It can! Store it in the fridge until it is ready to serve, and you can even warm it up in the slow cooker (set it on high) if you want – otherwise just transfer it to a pot and warm it on the stovetop. The noodles will have absorbed some of the broth, so you may need to add more broth to thin it out as you warm it up.

Ingredients
- 2 pounds boneless skinless chicken breast
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 1 sweet onion, peeled and diced
- 8 cups chicken broth
- 2 cups thin noodles
- Salt and pepper to taste
- Chopped fresh parsley
Instructions
- Place all ingredients except for noodles, parsley and salt and pepper into a large slow cooker. Cover and cook on low for 8 hours.
- Take out the chicken and shred it into pieces.
- While you are shredding the chicken, pour the noodles into the slow cooker, give the soup a stir and cook for another 15 minutes on high or until noodles are done. Stir the shredded chicken back in.
- Season to taste with salt and pepper. Ladle into bowls, garnish with parsley and serve!
