Why we love this recipe ❤️

Okay, so I would like to go on the record as saying that sometimes I make my own ricotta cheese, and my own butter, and my own applesauce, and I give it the good old college try in terms of making a decent amount of healthy seafood meals for the family.

So I feel like it is A-OK to make this oh-so-easy Dorito Chicken Casserole every now and then because it is SUPER easy and SUPER scrumptious and I promise you that nobody in your house is going to object to a chicken supper made with Doritos. And there’s nothing like a good easy casserole that they KNOW everyone is going to eat, right?

This easy peasy supper is a great way to use up leftover chicken (and if you are me, that inevitable jar of leftover salsa in my fridge). If you don’t have leftover chicken, a rotisserie chicken from your supermarket will work just fine.

And you can make a nice healthy supper salad tomorrow! 😇

  • Chicken: You can use either boneless chicken breasts or chicken thighs, whichever you prefer!
  • Cream of Chicken Soup: Look for this creamy canned chicken soup in, yep, the soup aisle! It will give this casserole the texture we love.
  • Taco Seasoning: You can pick up a packet in the international aisle of your supermarket or you can make your own taco seasoning with this easy recipe!
  • Salsa: Go for a mild salsa if you don’t want things spicy, or use the hot version if you want a little more sass! 🔥
  • Doritos: We like the Nacho Cheese version for this recipe, but use your favorite!

How to make this recipe 👩🏻‍🍳

STEP 1: Preheat oven to 350 and spray a 2 quart casserole dish with cooking spray.

STEP 2: Shred some cooked chicken into bite-sized pieces.

STEP 3: Put the chicken, 1 cup of the cheese, soup, milk, salsa and taco seasoning into a mixing bowl and stir until everything is mixed together.

STEP 4: Crush the Doritos into little pieces and spread half of them along the bottom of the casserole.

STEP 5: Add half of the chicken mixture, then most of the rest of the Doritos, then the rest of the chicken mixture.

STEP 6: Scatter the rest of the cheese over the top of the casserole, and garnish with the rest of the Doritos. Pop it all in the oven and bake for 30 minutes.

STEP 7: Let it cool for about 5 minutes, then scoop it out into bowls. Garnish with chopped scallions and a little sour cream. And if you are a cilantro person that would work too. I think. I am most definitely NOT a cilantro person.

And if there are any leftover Doritos in the bag, remember that the cook gets first dibs!

Recipe FAQs 🧐

What is the best way to get cooked chicken?

If you have the time, my favorite way to get myself a pile of cooked chicken is to pop a few chicken breasts in the slow cooker with about 2 cups of chicken broth and let it cook for 8 hours on low.  It will be amazingly tender.
 
Or, you can put the chicken in a pot of water, bring it to a boil and turn off the heat.  Cover the pot and let the chicken cool completely.  This is called poaching the chicken and again…so tender.
 
OR, you can buy a rotisserie chicken at your supermarket, or use leftover chicken.

How spicy is this recipe?

That all depends on the salsa you choose. A mild salsa for non-spicy people like me 🙋🏼‍♀️ will have just a hint of sass, and if you love to bring on the heat, use regular or extra spicy salsa.

Can this recipe be made ahead of time?

It can! Assemble it all the way up to sprinkling that top layer of Dorito crumbs and then cover it and pop it in the fridge. When suppertime rolls around, let it come to room temperature, add that layer of crumbs and pop it in the oven.
