This speedy recipe for chai spiced oatmeal pairs your favorite hot breakfast with some sweet spices. Perfect for a cozy brunch!
I have been in love with chai spices ever since my friend Susan took me by the hand years ago, put a chai tea from Starbucks in my hand, and said “trust me.”
Chai is a blend of honey, vanilla and a perfect combo of spices – cinnamon, cardamom, allspice, ginger and a teeny bit of black pepper (yes, black pepper! Don’t leave it out!).
234,475,104 Starbucks chai teas later, I have figured out various other ways to get the sweet and spicy taste of chai into my life.
Chai cookies, Chai butternut soup, chai brownies…I’ve figured out a whole passel of things to put some chai flavor into, and it’s only fair that breakfast gets its turn. And so…chai spiced oatmeal!
But first! At the other end of the spectrum from a humble bowl of oatmeal, there is the North Carolina State Fair food I mentioned last time.
The fair itself is of course not going on the way it usually would, but they figured out a socially distanced, grab and go way to make sure the famous fair food would go on!
So my sweet son-in-law and I grabbed our masks and our appetites and went for it.
I appreciated the flags going on here, but after past my experience with fried Oreos I took a pass on this one.
I also appreciated the unusual food pairing going on with this one…
The turkey leg stand was doing a booming business. You could get yours stuffed with macaroni and cheese if you wanted. TEMPTING.
We decided to go for something that we could pretty much only get at the fair though, so he had gator bites and a chocolate lush funnel cake, and I had deep fried crawfish tails with fries.
Even though we did pause on the shark bites! Oh, and we shared a basket of Cheerwine apple hushpuppies.
I’m now ready to eat healthy food for the next little while…and conveniently, oatmeal is as healthy as healthy can be!
Here’s how you make chai spiced oatmeal!
Bring 2 cups of water to a simmer in a medium sized saucepan. Add a cup of oatmeal and cook for 5 minutes, stirring every once in a while.
When the oatmeal is thickened, stir in a couple tablespoons of honey along with some vanilla, cinnamon, allspice, cardamom, ginger and black pepper. You might be tempted to leave out that black pepper but don’t! Trust me.
Divide your glorious chai spiced oatmeal among two warmed bowls, drizzle with honey and if you like, serve with warmed milk for pouring on top!
Yum, yum and yum again. Hurray for chai!

Ingredients
- 1 cup rolled oats
- 2 tablespoons honey, plus extra for drizzling
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ¼ teaspoon cardamom
- ¼ teaspoon allspice
- 1/8 teaspoon ground ginger
- 1/8 teaspoon black pepper
- Warmed milk for serving (optional)
Instructions

- When the oatmeal is thickened, stir in all remaining ingredients until fully combined.
- Divide among 2 warmed bowls, drizzle with honey and if you like, serve with warmed milk for pouring on top!

A lazy, rainy Saturday morning with a pot of this heavenly oatmeal on the stove, smooth jazz in the background and a hot cup of coffee…bliss ???? When the vanilla mingles with the warm spices, the aroma is like a comforting hug! This is my favorite way to enjoy oatmeal, in case you can’t tell.
