You know what’s great? BACON.
You know what’s ever better? Having this easy peasy bacon cheese rolls appetizer on hand for a dinner party, the cocktail hour, or when you just feel like spoiling yourself with a little bacon!
In addition to these yummies, when I feel like spoiling myself with bacon, I ask the Southern husband to drive us over to this little joint in Chapel Hill called Merritt’s Grill.

I go for the baby BLT, he goes for the single BLT, and I am hoping one day to be there when someone orders the triple. Challenging – ha!
Back at this recipe, one of the other great things about it is that it only calls for three ingredients – bacon, cream cheese and bread – all of which I have on hand at all times.
Here’s how to make bacon cheese rolls!
Preheat your oven to 350 and line a rimmed baking sheet with foil. Put a cooling rack on top of the baking sheet and spritz the rack with cooking spray.
Cut the crusts off of the bread slices and spread each slice with cream cheese.
Cut each slice in half and roll them up, cheese side in.
Wrap each cheese roll with a piece of the bacon and secure it with a toothpick. Place the rolls on the cooling rack and pop the whole thing in the oven.
Cook for 25 minutes. If you want the bacon crispier, turn the broiler on for a minute or two – watch them carefully!
Let your rolls cool for a few minutes, then pop them on to a pretty plate and serve ’em up!
More tips for making bacon cheese rolls!
You can, but I highly recommend using regular sliced bacon instead of the thick cut variety, because it will cook up easier and more evenly.
I wish I could say yes, but no, they need to be enjoyed pretty quickly after they come out of the oven. You can put them together ahead of time though, and then bake when you are ready!
Brush them with a little bit of maple syrup, and sometimes I also dust them with cornmeal. The. Best.
I mean, just look at them.
