Who knew that crackers wrapped in bacon could be so deceptively, deliciously addictive? Bake up some bacon crackers with this super easy recipe…and be sure to invite over some bacon loving friends so you don’t accidentally eat them all yourself!
I have been hearing about these crackers, oh, forever. They have exactly two ingredients: a butter cracker (like Waverly or Town House) and bacon.
And everything I had heard about them was that they were basically one of the best things a true bacon lover will ever eat. Bacon heaven. Bacon Nirvana. The bacon Holy Grail.
And because I was worried that they would not live up to their reputation and also that they WOULD and that I would eat them all at one sitting, I didn’t make them. For years I didn’t make them.
And then one day…one day….I MADE THEM.
Before I tell you what I thought, let me tell you two important elements of making them. First of all, you need oval butter crackers. Ritz or other round crackers won’t work, because you need the bacon to wrap around them like a nice little bacon belt.
And as for that bacon, use the regular thin sliced kind. Save your lovely artisan thick crusted bacon for something else – the regular old thin kind works the best for this.
I cut the bacon strips into thirds, and wrapped each piece around a cracker. Pop the crackers on a rack (the kind you cool cookies on) that is set on a foil-lined rimmed baking sheet.
Now put them in an 250 degree oven for 2 hours. You don’t have to turn them or anything – just let them cook slowly until the bacon is done.
Here’s what’s happening in that oven. The bacon is cooking, and it is shrinking up ever slightly around the cracker. As it does, some of the bacon drippings are infusing themselves into the cracker.
So that when you pop one in your mouth, it tastes like a gentle explosion of bacon and soft buttery cracker center and salty crispy cracker edges and oh my my MY. Your mouth is going to tell your brain this…
At which point you either need to invite a whole bunch of friends over, or immediately leave the house. Because eating all of them at once? Totally, completely possible.
I’ve seen the light, and it’s bacon crackers. Bacon. Crackers. Don’t wait another minute.

Ingredients
- 1 sleeve Town House or other oval butter crackers (about 24)
- 8 slices thin bacon, cut in thirds
Instructions
- Preheat oven to 250. Line a rimmed baking dish with foil and place a cooling rack on top.
- Wrap each cracker in a piece of bacon and place it on the rack.
- Bake for 2 hours or until bacon is cooked. Cool slightly and ENJOY! Preferably with a bunch of friends so you don’t eat them all yourself.

No need for toothpicks? This sounds so good. Wondering if adding a little cayenne to the brown sugar suggestions below would not go amiss?

Nope, no toothpicks needed – the bacon will stick and cook obediently around the crackers. And a teeny pinch of cayenne is a super idea! :)

I thought about using brown sugar as well but making a brown sugar glaze and drizzling over the top while baking.
