Preheat oven to 350 and line a rimmed baking sheet with foil. Put a cooling rack on top of the baking sheet and spritz the rack with cooking spray.
Cut the crusts off of the bread slices, and spread each slice with cream cheese.
Cut each slice in half and roll them up, cheese side in.
Wrap each cheese roll with a piece of the bacon and secure it with a toothpick. Place the rolls on the cooling rack and pop the whole thing in the oven.
Cook for 25 minutes. If you want the bacon crispier, turn the broiler on for a minute or two – watch them carefully!
Let your rolls cool for a few minutes, then pop them on to a pretty plate and serve!
