    Feta Mashed Potatoes

    This easy recipe for creamy feta cheese mashed potatoes adds a tangy cheesy flavor to everyone’s favorite side dish!

    The Southern husband and I have a strict rule in our house that goes like this: No Ingredient Shall Be Left Behind.

    Which means if I buy an ingredient for a specific recipe and don’t use all of it up, I gotta figure out another recipe so that the extra doesn’t go to waste.

    And one item I always seem to have bits of pieces of is feta cheese, probably because I love its tangy, creamy flavor. So while sometimes abiding by the Ingredient Rule is a challenge, I can always figure out how to find a place for feta cheese!

    What’s the best feta cheese to buy?

    I’ll start by saying what you should NOT buy, and that is those feta cheese packages that have it already crumbled up.

    It takes about 10 seconds to crumble up a block of feta cheese, and it will be so much creamier and dreamier than those crumbles, which can be dry and sometimes have additives in them.

    I also like to look for blocks of feta cheese in brine, which gives it a lovely extra flavor and of course keeps it nice and tender, and makes it last longer…which is important if it is going to hang around to be used in multiple recipes!

    How to make creamy feta cheese mashed potatoes!

    As always, I love Yukon Gold potatoes for mashies. Not only do they have the best consistency and flavor, but because of their thin skin you also don’t have to peel them!

    You can if you want to of course (and then please make potato peel chips from the peelings), but I just scrub them up, cut them in quarters and boil them up until they are tender.

    Next, give them a good first mash with your handy potato masher or potato ricer, and then add a little milk, a little butter and of course some glorious feta cheese.

    Mash that all up together and then give it a taste. You will probably want to add a smidge of salt, and you should definitely add a nice grinding of pepper.

    And last but not least, scatter a little extra feta cheese on top before you serve it up!

    And if all this has gotten you in a mashed potato mood, I’m here to tell you that brown butter mashed potatoes and Instant Pot mashed potatoes are pretty dang good too.

    Ingredients

    Scale
    • 4 medium sized Yukon Gold potatoes
    • ¼ cup milk
    • 1/4 cup feta cheese, room temperature and broken into crumbles, plus extra for garnish
    • 2 tablespoons butter, softened
    • Salt and pepper

    Instructions

    1. Scrub the potatoes well (no need to peel them unless you want to!) and cut them into quarters. Place them in a medium size pot, cover with water and bring to a simmer.  Cook until tender, about 10-15 minutes and drain.
    2. Return the potatoes to the pot and mash with a potato masher (or you can rice them if you have a potato ricer).
    3. Add the milk, cheese and butter and mash again until they are the consistency that you like. Scatter some more crumbled feta on top, season to taste with salt and pepper and serve!
