We’ll eat Mexican food any day of the year, but on Cinco De Mayo you definitely need some easy and scrumptious Mexican recipes on hand, and here are some of our favorites!
From sheet pan nacho quesadillas to our favorite recipe for a creamy chicken enchilada casserole, we have something for every Mexican food lover. And you KNOW we wouldn’t forget the margaritas!

What is Cinco de Mayo?
Cinco de Mayo is an annual celebration held on May 5 marking Mexico’s victory over the French at the Battle of Puebla in 1862.
This holiday is celebrated enthusiastically in the United States to honor Mexican-American culture with parties, food, music, and dancing…and I’m here to help with the food part (and please remember that this is an Irish girl’s take on Mexican food, so be patient with me!)
#1: Sheet Pan Nacho Quesadillas
