Published: May 1, 2025 by Kate Morgan Jackson · This post may contain affiliate links · Leave a Comment

We’ll eat Mexican food any day of the year, but on Cinco De Mayo you definitely need some easy and scrumptious Mexican recipes on hand, and here are some of our favorites!

From sheet pan nacho quesadillas to our favorite recipe for a creamy chicken enchilada casserole, we have something for every Mexican food lover.  And you KNOW we wouldn’t forget the margaritas!

Strawberry basil margarita in the grass.

What, you don’t take pictures of your cocktails sitting in a patch of sunny grass? Oh, the strange life of a food photographer! 😅

    What is Cinco de Mayo?

Cinco de Mayo is an annual celebration held on May 5 marking Mexico’s victory over the French at the Battle of Puebla in 1862.

This holiday is celebrated enthusiastically in the United States to honor Mexican-American culture with parties, food, music, and dancing…and I’m here to help with the food part (and please remember that this is an Irish girl’s take on Mexican food, so be patient with me!)

    #1: Sheet Pan Nacho Quesadillas

Sheet pan beef nacho quesadillas on a pan with guacamole and limes.

These were fantastic! I love the way the Velveeta was incorporated so it was all melted and mixed in. A little sour cream and they were perfection! ~ Emily

This fun recipe for sheet beef nacho quesadillas cooks up a meat and cheese-filled supper for a crowd all in one sheet pan.  Cheesy spicy deliciousness!. 🤩

    #2: Frito Chili Pie

Frito chili pie in a casserole sitting on a dishcloth.

I love a recipe that has only 3 steps! This came out perfect – would be a great tailgate food!  ~ Michelle

This simple Frito Chili Pie recipe is so easy that you can put it together in ten minutes and bake it up in fifteen minutes. And we know everyone loves Fritos!

    #3: Corn Chip Taco Salad

!ngredients for corn chip taco salad ready for mixing in bowl.

This is a family favorite! We use chili cheese fritos and sub in white corn & black beans for the tomato & avocado. ~ Trish

SPEAKING of Fritos…there are taco salads. And then there is this recipe for corn chip taco salad that has all the great taco salad ingredients and a corn chip crunch!

    #4: Beef Enchilada Casserole

Beef Enchilada Casserole on a placemat.

This is cheesy taco/enchilada perfection! So delicious! ~ Elena

This easy recipe for beef enchilada casserole uses your microwave (yes, the microwave!) to cook up this spicy, cheesy supper in no time flat! Spicy taco-tasting meat and gooey melted cheese mixed in with layers of corn tortilla pieces.

    #5: Chicken Enchilada Casserole

Creamy chicken enchilada casserole on a wooden board.

Love this cheesy enchilada recipe! It was easy and fed a crowd – we love to see it! ~ Sara

Let’s give the chicken some equal enchilada time! This creamy chicken enchilada casserole recipe is perfect for a hungry crowd, and so easy to put together!

    #6: Nacho Cheeseburgers

    Nacho Cheeseburger on a napkin.

Oh yum! What is there not to love about a juicy burger smothered in spicy cheese sauce?   ~ Theresa

This recipe for nacho cheeseburgers swaps out the usual American cheese for a melty Velveeta sauce that is jazzed up with a little chili powder and some salsa. And the beauty part of this easy cheeseburger recipe is that you control the amount of sauce by the type of salsa you have.  If you are a chicken when it comes to spices (raises hand) you can use mild salsa. If you are my mom or my sister, you use the hottest salsa you can find.  You be you!

    #7: Potato Skin Tacos

Potato skin tacos on a plattter.

I love this idea! We make taco potatoes (like nachos) but I love that you put them in the skins. Genius! ~ Dorothy

These potato skin tacos are the marriage of two of my favorite things: tacos and twice baked potatoes. Welcome to your new favorite stuffed potato supper!

    #8: Taco Pie!

    Taco pie with a spoon.

Well I know what I’m having for lunch now!
Though I’m totally gonna add several spoonfuls of pickled jalapenos+carrots.  ~ Mary

This delicious and spicy taco pie recipe is perfect for Cinco de Mayo or just when you get a craving for a little spice in your supper. A fun twist on your favorite taco salad!

    #9: Homemade Taco Seasoning

Homemade taco seasoning with a jar and a measuring spoon.

This came out so much better than the packaged kind and lasted SO much longer! Two thumbs up! ~ Cameron

The one “staples” item I make from scratch more than any of the others is what I modestly call the best taco seasoning recipe EVER. It’s a combo of a bunch of spices I always have on hand, and it can be adjusted to anything from mild to smoke coming out of your ears spicy. 🌶️

    #10: Strawberry Basil Margarita

Strawberry basil margarita in the grass.

I love a strawberry margarita! I never even considered that I could make my own but this was so easy! Summer drink on lock! ~ Val

Here comes that strawberry basil margarita deliciousness. Icy cold, just the right amount of sweet, and with a dash of tequila to give you that laid back summer vibe…and it takes all of ten minutes to shake one up.

    GET THE RECIPE!

I hope this gives you some delicious inspiration for your Cinco de Mayo feast! And I’ll sign off with a picture of two colorful margaritas from one of the monthly Mama~Daughter dinners out that I have with my bunny. Yes, she is old enough to drink margaritas. SOB.

    Two colorful margaritas.

Have a delicious Cinco de Mayo!
