Shrimp, shrimp, shrimp….what else can I tell you about shrimp that I haven’t said a hundred times before? How about that if you make it with a lovely light gorgonzola sauce and serve it over a bed of roasted asparagus, all your cares will magically disappear for at least as long as you are at the dinner table?

He gets to wear that along with his finger splint until we sort out this whole rotator cuff shebang. In the meantime his ribs have gotten so much better that I have had to stop making rib-related snarky remarks since they almost aren’t applicable to him any more. So THAT’S good!
As for the other mishap that happened to us last week, the dog is completely, totally recovered, and apparently remembers and has learned nothing from her escapade last week wherein she stole and ate my entire Valentine’s heart worth of candy and had to go to the vet to have that thievery, um, reversed.
I got various replacement boxes of candy sent to me by various people I love dearly, including the Southern daughter who sent me every box of candy that her third graders gave her for Valentine’s Day. When I opened this package of wonderfulness, the dog started dancing around like it was Christmas. Yep. Learned nothing. The candy is now on a very high shelf.
Although I did let her try on a pair of Valentine socks that were also in the package.

So all in all, we are much better than we were this time last week, but that doesn’t mean that we would say no to a plateful of this easy and delectable shrimp with gorgonzola sauce. The sauce itself is a very light and barely there coating of buttery cheese, just enough to give the shrimp a little creamy blue cheese zing. It all cooks up in the same skillet and is ready in about 15 minutes (not kidding), which makes it even more scrumptious.
I like to have this over roasted asparagus, but it would also be lovely over rice, polenta, mashed potatoes, farro…the mind spins! So the next time you need a quick and delicious elegant dinner for any reason at all…shrimp with gorgonzola sauce!

Ingredients
- 8 ounces large shrimp, peeled and deveined
- 2 tablespoons butter
- 1 minced garlic clove
- 1 1/2 tablespoons fresh lemon juice
- 1/2 cup crumbled gorgonzola cheese
- Chopped fresh parsley
- Fresh ground pepper
Instructions
- Melt butter with garlic in large pan over medium high heat, and saute shrimp until opaque. Add cheese and lemon juice and stir until cheese is just melted.
- Serve over rice, garnished with parsley and fresh ground pepper

What a simple but elegant meal! This looks easy enough for a fun weeknight dinner but definitely lovely enough for company – can’t wait to try it out! Wow! What a time of it you’ve all had. Glad to hear that your dear ones are recovering! When I was a kid, my father bought my mother a very large box of chocolate covered cherry cordials for Valentine’s Day. The family went out for a nice dinner to come home to a not so nice surprise on the floor. Our dog had eaten the entire box of chocolates – minus three pieces. Luckily, he did the “reversing” himself and we did not have to bring him to the vets. So, I remember this and feel your pain…
