Ingredients

Scale
  • 8 ounces large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 minced garlic clove
  • 1 1/2 tablespoons fresh lemon juice
  • 1/2 cup crumbled blue cheese
  • Chopped fresh parsley
  • Fresh ground pepper

Instructions

  1. Melt butter with garlic in large pan over medium high heat, and saute shrimp until opaque. Add cheese and lemon juice and stir until cheese is just melted.
  2. Serve over rice, garnished with parsley and fresh ground pepper.

Notes

    • Shrimp: We like extra large shrimp for this recipe, but any size will work.

    • Blue Cheese: There are SO many kinds, and really any kind will work. We like Gorgonzola for the milder taste…if you want some kick in your blue cheese go for Roquefort. We do recommend getting a block and crumbling it yourself (instead of getting the pre-crumbled kind) for the freshest taste.
