Blue Cheese Shrimp

Shrimp, shrimp, shrimp….what else can I tell you about shrimp that I haven’t said a hundred times before?  

How about that if you make it with a lovely light blue cheese sauce and serve it over a pile of buttered rice, all your cares will magically disappear for at least as long as you are at the dinner table?

The sauce itself is a very light and barely there coating of buttery cheese, just enough to give the shrimp a little creamy blue cheese zing.  It all cooks up in the same skillet and is ready in about 15 minutes (not kidding), which makes it even more scrumptious.

This seafood supper is lovely over rice, polenta, mashed potatoes, farro…the mind spins!  So the next time you need a quick and delicious elegant dinner for any reason at all…shrimp with blue cheese sauce!

  • Shrimp: We like extra large shrimp for this recipe, but any size will work.
  • Blue Cheese: There are SO many kinds, and really any kind will work. We like Gorgonzola for the milder taste…if you want some kick in your blue cheese go for Roquefort. We do recommend getting a block and crumbling it yourself (instead of getting the pre-crumbled kind) for the freshest taste.

STEP 1. Melt some better with garlic in a large skillet over medium high heat and sauté some shrimp until they are just done, about 3 to 5 minutes.

STEP 2: add some crumbled blue cheese and lemon juice to the skillet and stir until the cheese is just melted. You’re done! Yes, really! All that’s left to do is spoon it over rice or pasta or whatever else catches your fancy.

How do I clean and devein shrimp?

Now, you don’t HAVE to take the vein (that dark line up the back of the shrimp) out, but lots of folks prefer their shrimpies that way. Pull off the shell by wiggling it apart at the bottom of the shrimp. Once the shell is off, cut a shallow line along the top of the shrimp where the vein is, pull it out with the tip of the knife and…you’re done! Put the shrimp shells in a zippered plastic bag when you toss them out, because if they sit in your trash can for more than a few hours…well, I’ll let you use your imagination.

What size shrimp should I use?

You can use any size shrimp you like! We like extra large for this recipe, but you do you, shrimp-size-wise.

Can this recipe be made ahead of time?

Nope, this is one of those recipes that needs to be done right before you serve it. But it’s a speedy one, so even if you are tight on time this one will work!

🍽️ What to serve with this recipe

We like to add a veggie on the side…some asparagus or carrots with thyme are great choices. You can also serve this over whipped cauliflower instead of rice and get your veggies in that way.

  • 8 ounces large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 minced garlic clove
  • 1 1/2 tablespoons fresh lemon juice
  • 1/2 cup crumbled blue cheese
  • Chopped fresh parsley
  • Fresh ground pepper

Instructions

  1. Melt butter with garlic in large pan over medium high heat, and saute shrimp until opaque. Add cheese and lemon juice and stir until cheese is just melted.
