Why we love this recipe 🥰

Oatmeal is always and forever a scrumptious and satisfying choice for breakfast, either plain or jazzed up with with some sweet oatmeal flavor. And don’t even get me started on the wonderment that is Overnight Oats.

But if you told me I could only have oatmeal one way for the rest of my life (please don’t tell me that 😳) I would pick this recipe for savory oatmeal. With an egg on top.

This speedy recipe is a lunchtime favorite in my house. It cooks up some rolled oats the way you usually do, and then adds a handful of cheese that melts into the warm oats.

And while you can absolutely stop there, I can never resist adding an egg. Here’s how you poach a perfect egg, and here’s how you fry a perfect egg, and either way is just the ticket for adding some protein to this healthy oatmeal dish.

And if I am feeling super sassy, especially if I am making this for a light supper, I sprinkle some scallions on top.

One way or the other, this takes about fifteen minutes from walking into the kitchen to sitting down with a bowl of creamy, cheesy oatmeal. Happy sigh.

Ingredient notes and substitutions 📝

  • Oatmeal: We like regular rolled oats for this recipe, but you can use any kind (instant, steel-cut, etc) as long as you follow the cooking instructions on the package.
  • Cheese: Cheddar is our first choice, but any melty cheese will work…American, Muenster, Monterey Jack and yes, Velveeta!
  • Garnishes: If you are looking to level up, chopped scallions, chives and parsley are all lovely. So is a nice grinding of black pepper!

Here’s how you make this recipe 👩🏻‍🍳

STEP 1: Cook up some rolled oats the way you usually do…bring a cup of water to a boil and add a half cup of oats, and let it all simmer for about five minutes.

STEP 2: When the oats are done, stir in a half cup of shredded Cheddar cheese. Give it a stir.

STEP 3: You can stop at the cheese part, but I highly recommend topping your bowl of cheesy oatmeal with your favorite version of a soft cooked egg. Poached eggs , soft-boiled, over-easy eggs…it’s your choice, just so long as the yolk is still nice and creamy. 

Because now you are going to plunk that egg into your bowl of cheesy oatmeal, and then break the egg up just a little so the yolk melts in.

Scatter a few scallions on top if you want, and then a grinding of fresh pepper, and you are done!

How do you poach an egg?

Can I use a different kind of cheese?

Yep! Anything that is shreddable and meltable will work. Try it with grated Swiss, shredded mozzarella or even good old chopped up Velveeta.

Can I use instant oats, or steel cut oats?

You can! I like this best with regular rolled oats, but as long as you cook them according to the package directions, any kind of oats will work.

Ingredients

  • 1/2 cup rolled oats
  • Coarse salt and fresh ground pepper
  • 1 egg
  • 1/2 cup shredded sharp Cheddar
  • 1 tablespoon sliced scallions (optional)

Instructions

  1. Bring 1 cup water to boil in small saucepan. Add oats and pinch of salt and simmer until tender, about 5 minutes. Add 1/4 cup cheddar and stir.
  2. Meanwhile, soft-cook the egg in whatever way you like best. Soft-boiled, poached or over easy will all work, so long as the egg yolk is still a little liquid and creamy.
  3. Ladle oatmeal into bowl. Sprinkle with remaining cheddar and top with cooked egg. Scatter scallions on top and eat at once.
