Yep, as long as you can boil water and push the on button, you are all set with this one, and that’s my kind of dinner on a weeknight. And recently we had a weekday to end all weekdays (wedding update, hint hint!) so it was great to have a delicious and easy pasta recipe to come home to.

So just to jump right to the chase wedding-wise, last weekend we said Yes To The Dress! We are lucky enough to live pretty close to Kleinfeld’s, which is a gorgeous, 70 year old store with 30,000 square feet of wedding dresses (and yes, where they film the show, if you watch it. No, we are not going to be on the show. There’s only so much wedding excitement that I can take.)
From the minute we walked in the place, I knew that the Southern daughter’s dress was in there somewhere. It was a magical emporium of wedding dress fabulousness, and they could not have been nicer. The bride felt like a princess, and after trying on about 10 dresses, she came out looking like an absolute princess in the dress of her dreams.
As you can imagine, I am NOT ALLOWED to show you the dress until after the wedding day, but let’s just say that I held it together until they put the veil on her head and then I dissolved. And a sweet Kleinfeld’s person was at my side in a flash with a box of tissues.
She had brought a wedding dress team with her, so after we were done we went over to Elmo’s and I said to the nice waiter, “A round of prosecco for everyone please!”
To which he said, “Oh, did you just say yes to the dress?” Ha! I’m guessing Elmo’s has seen their fair share of happy brides and happy mothers-of-the-bride and happy wedding dress teams.
So after a day like that, you go home and take a long nap and then you make pasta with shrimp and feta cheese sauce to revive yourself.
Here’s how you make pasta with shrimp and feta cheese sauce!
Fill up a good sized pot with water and put it on to boil. While you are waiting for it to boil, cut up some tomatoes and toss them in a bowl. Any kind of tomato will do. I had some nice cherry tomatoes when I made this.
And now comes the fun part. Toss the following into your food processor: scallions, feta cheese, cottage cheese.
Press the button until it is all nice and creamy, and then taste it to see if it needs any salt and pepper. Then scoop it into the bowl with the tomatoes.
Your water should be boiling by now. Drop your shrimp in and cook them for about 2 minutes, just until they are nice and pink. Without turning the water off, scoop them out with a slotted spoon, drop them into the bowl with the sauce and give it all a stir.
Drop the pasta into the still boiling water and when it is done, drain it, toss it with the sauce, and dinner is served.
Grind a little fresh pepper on top and toss on some scallions and nobody will ever know that this involved exactly one mixing bowl and a pot of boiling water. And your trusty food processor, of course!
Now go hug your baby girls because before you know it you will be sobbing happy tears in the middle of a wedding dress store!

Ingredients
- 1 pint cherry tomatoes, cut in half
- 3 scallions, chopped
- 4 ounces feta cheese, crumbled
- 1 cup cottage cheese
- Milk as needed to thin the sauce
- 8 ounces shrimp, peeled and de-veined
- 8 ounces pasta (linguine or spaghetti)
- Freshly ground pepper
Instructions
- Put the cherry tomatoes in a large bowl, and put a large pot of water on to boil.
- Put feta cheese, cottage cheese and all but 1/4 cup of the scallions into a food processor and process until smooth. Thin as needed with milk until it is still thick but sauce-like. Add to bowl with tomatoes.
- Add shrimp to boiling water and cook for 3 minutes. Remove with slotted spoon and add to sauce, tossing gently to combine.
- Add pasta to the still-boiling water and cook according to package directions until done. Drain.
- Add pasta to sauce and toss. Divide among plates and grind a little pepper on top. Scatter remaining scallions on top and serve!

Goat cheese would definitely be a good option for a little milder taste…good variation suggestion!

It was a little too bitter for my taste. I think it would have gone better together with something creamier like goat cheese.
