    One Pan Chicken Parmesan

    Why we love this recipe ❤️

    I do love a good chicken parm and while some days I am fine waiting for that to cook up, sometimes I want my chicken parm NOW.

    And that is where this simple, scrumptious recipe for one pan chicken parmesan comes in.

    As you can tell from the title, not only do you get this family favorite supper on your plate, but it cooks up in one pan and it is ready in a quick 30 minutes.  

    And, because we are cooking the chicken in a tomato sauce and sprinkling some delectable crispy breadcrumbs on top instead of dredging the chicken and frying it, this is a lighter version of chicken parm. (We didn’t hold back on the cheese though!)

    What is Chicken Parmesan? 🍗

    Chicken Parmesan (also called Chicken Parmigiana or just plan Chicken Parm) is an Italian-American dish that features a breaded and fried chicken breast that is topped with tomato marinara sauce and melted cheese, usually mozzarella and parmesan. Sometimes it is served with or over pasta and sometimes it is a hearty sandwich filling.

    Ingredient notes and substitutions 📝

    • Chicken: This recipe uses boneless pounded chicken breasts. You can swap in thin sliced chicken breasts, chicken tenders or even boneless chicken thighs if you prefer.
    • Red Wine: Whatever you have around the house will work! For us, that is usually Pinot Noir.
    • Mozzarella: Either the regular or part skim is fine.

    How to make this recipe 👩🏻‍🍳

    STEP 1: Put olive oil in a large skillet and heat over medium high heat.

    STEP 2: While oil is heating, whirl the bread in your food processor until they are crumbs. Add the crumbs to your skillet with a pinch of salt and pepper and stir until crispy.  Scoop out and set aside.

    STEP 3: Pour the wine and tomatoes into the skillet, add a pinch of salt and pepper and simmer for 10 minutes over medium heat.

    STEP 4: Add the chicken to the sauce and simmer for 5 minutes. Turn the chicken over, scatter on the mozzarella cheese and cover the skillet.  Cook for another 5 minutes.

    STEP 5: Mix the parmesan cheese and oregano into the breadcrumbs. Put a piece of the chicken parm on each plate along with a generous amount of sauce. Sprinkle with the breadcrumb mixture and serve!

    Recipe FAQs 🧐

    Can I substitute anything for the red wine?

    You can! Use the same amount of chicken broth. The taste of the sauce will be a little milder.

    Can I use pre-made breadcrumbs?

    Technically yes, but the flavor of freshly made and toasted breadcrumbs gives such a great taste to this recipe that we recommend making them if you can!

    How do I know if the chicken is done?

    The ten minutes it spends cooking in the tomato mixture should do it, but if you want to make sure you can test it with a meat thermometer – push it into the thickest part of the chicken and it should read 165 when it is done.

    Can this recipe be made ahead of time?

    You can make the breadcrumbs ahead of time for sure. The rest of the recipe should be made right before you are ready to serve it.

    What to serve with this recipe 🍽️

    This delectable chicken parm is perfect with a big old pile of pasta, but if you want a salad on the side, this green bean tomato salad is just the ticket.
