Applesauce Blender Muffins
These easy applesauce blender muffins are soft, warmly spiced and ready in just 30 minutes—simply blend the batter, pour and bake!

Every apple season, the Southern husband and I head to our favorite apple orchard and attempt to pick apples slowly and sensibly. Somehow, we still come home with three pecks—which is a whole lotta apples for two people!
Three pecks of apples inevitably lead to a giant vat of homemade applesauce. And after we’ve eaten plenty and handed mason jars to everyone we know, it’s time to turn some of that applesauce into these soft, warmly spiced muffins. Everything goes right into the blender, and 30 minutes later—muffins!
I love making them with that homemade applesauce, but store-bought applesauce works perfectly too.

- Regular and brown sugar: Regular sugar adds sweetness, while brown sugar brings a hint of molasses flavor and extra moisture.
- Cinnamon and nutmeg: These warm spices give the muffins their cozy fall flavor. Nutmeg is potent, so that little half teaspoon is all you need!

Yes! For this recipe, whisk together 1½ cups all-purpose flour with 2¼ teaspoons baking powder and ¼ teaspoon salt. Use this mixture in place of the self-rising flour.
Either will work, but I recommend unsweetened applesauce because the batter already contains both regular and brown sugar.
You can. Whisk the wet ingredients and sugars together in a mixing bowl, stir in the spices and flour just until combined, and then continue with the recipe as written.
Lightly coat the paper liners with cooking spray before adding the batter. Letting the baked muffins cool for a few minutes also makes the liners easier to remove.
Keep the cooled muffins in an airtight container at room temperature for up to three days. You can also freeze them in a freezer-safe bag for up to three months and thaw them at room temperature.

Ingredients
- 1 egg
- 3/4 cup milk
- 1/2 cup regular sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 1/2 cups self-rising flour
- 1 cup applesauce
- Cinnamon sugar for garnish
Instructions
- Preheat oven to 350 and line a 12 cup muffin tin with paper liners. Spray the liners with cooking spray.
- Put all ingredients except for cinnamon sugar in your blender and blend for 30 seconds, stopping halfway through to stir the mixture and scrape down the inside of the blender.
- Pour the muffin batter into the muffin tin and sprinkle each muffin with a pinch of cinnamon sugar.
- Bake for 20 minutes or until golden brown. Cool just a little and then eat the first ones while they are still warm!

Hi there! You do need to use self-rising flour because that’s what gives the muffins their fluffy texture.
