    Why we love this recipe

The Southern husband and I are currently in one of our Only Eat The Healthy Things phases, but eating healthy does not mean eating boring.

And that is where this scrumptious, super-fast, super easy baked salmon recipe comes in. Tender salmon, lovingly brushed with a sour cream mustard glaze and then topped with a sassy lime mustard sauce.

Only 6 ingredients, about 5 minutes of prep time, 15 minutes in the oven and then you are sitting down to a fast and fabulous seafood supper.

    How to make this recipe

STEP 1: Preheat oven to 450 and line a rimmed baking dish with parchment paper.

STEP 2: Mix the sour cream and one tablespoon of Dijon mustard together and spread it over the salmon.  Place the salmon on the prepared baking dish and roast for 15 minutes.

STEP 3: Cut the lime in half, and squeeze the juice from one half into a small bowl and mix with the grainy mustard.  Cut the other half of the lime into wedges.

STEP 4: When the salmon comes out the oven, spread the lime juice mixture over the top of it.  Using 2 forks, pull it into chunks, sprinkle with chives and serve!

    Recipe FAQs

What kind of salmon should I buy?

I know, so many choices at that seafood counter! Experts tend to agree that wild caught salmon is the best nutritional choice, because those salmon eat a more natural diet. However, you are mostly going to find farmed salmon, which is a perfectly find back-up choice. Salmon is a good and good for you power food!

Can I use a different herb than chives?

You bet! I like both fresh oregano and fresh thyme for this recipe – you could also use chopped scallions.

Are you supposed to eat the skin on the salmon?

You 100% can if you want to – it is actually full of good nutrients – but some folks (raises hand) don’t like the texture. So, totally up to you!

Equipment we used for this recipe

These are some of my favorite kitchen tools! These are Amazon affiliate links, which means I get a little something if you buy through my links at no extra cost to you. (Which helps pay for all that bacon I keep buying! 😄) And I only share things I use and love. I’m so grateful for your support!

    • Rimmed Baking Pan: This pan never goes in the cupboard…we love its rimmed sides for catching any drips that might happen in the oven, so we use it for everything from this baked salmon recipe to our favorite Eggs In Clouds!
    • Fish Spatula: This super thin, super long and flexible spatula is perfect for lifting a delicate piece of fish (or our favorite cinnamon oat pancakes).
    • Citrus Juicer: There’s a reason you often see this handy juicer in your favorite bars…it squeeze out all the juice and holds back all the seeds.
    • Parchment Paper: This oven-safe paper make sure nothing sticks to the pan, and makes clean-up easier. Double win!

While I like to pull the roasted salmon apart into chunks when it is cooked (although serving it whole is a-ok too!) we have been known to eat it right off of the pan. 😂

Leaving us exactly zero dishes to wash at the end of the evening.  I know, it just keeps getting better and better!

What can I serve with this recipe?

We love some asparagus topped with crispy breadcrumbs alongside our roasted salmon deliciousness. We also are so happy with a heap of sour cream potato salad as well. Or if you are making this in the summer, this summer tomato salad is perfection. And for dessert, let’s have some fruit-filled strawberry crumble muffins!

I was just lamenting the “same old, same old” of our salmon game. This looks delish and zingy (to borrow one of my favorite words from your food adjective repertoire). Can’t wait to try it!
