Ingredients

Scale
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 pound boneless salmon filet
  • 3 tablespoons grainy mustard
  • 1 lime
  • 1 tablespoon chopped fresh chives

Instructions

  1. Preheat oven to 450 and line a rimmed baking dish with parchment paper.
  2. Mix the sour cream and one tablespoon of Dijon mustard together and spread it over the salmon.  Place the salmon on the prepared baking dish and roast for 15 minutes.
  3. Cut the lime in half, and squeeze the juice from one half into a small bowl and mix with the grainy mustard.  Cut the other half of the lime into wedges.
  4. When the salmon comes out the oven, spread the lime juice mixture over the top of it.  Using 2 forks, pull it into chunks, sprinkle with chives and serve!

Notes

  • Salmon: You want a boneless salmon filet that’s about 1 to 1½ inches thick so it roasts evenly and stays moist. We like Atlantic salmon if you can find it…it’s got a rich buttery flavor and holds up really well for roasting.
  • Mustards: We like the combo of Dijon and grainy mustard, but you can mix and match whatever mustard you have on hand.
