    Prosciutto Caprese Salad

    A few simple fresh summer veggies combine with silky cheese and salty meat in this easy recipe for Prosciutto Caprese Salad!

    Why this recipe works

    Recipes are born all sorts of ways in my house.  Some of them come together because the Southern husband starts reminiscing about the banana pudding his mama used to make.  

    Some are invented because I have heard one too many times about ramen burgers and I absolutely NEED to figure out my own version of them.  

    And sometimes I just have an assortment of ingredients left from other things in the fridge that all of the sudden look like they belong together.

    Burrata cheese. Paper thin prosciutto. Baby lettuce. Scallions. Cherry tomatoes (and okay, those were on my counter. Tomatoes should never live in the fridge).

    And then I started thinking, what if I started out with a basic Caprese Salad and then added in some grilled scallions and some of that prosciutto.

    I brushed the scallions with a little olive oil, sprinkled on some sea salt and grilled them up.

    Then I tore the cheese into bite sized pieces, cut up the tomatoes and put a little bit of everything on a plate.  I drizzled on some olive oil and a little bit of balsamic vinegar…

    Proving once again that gazing into the fridge for inspiration sometimes really works!

    What to serve with this recipe

    This salad is a lovely light lunch, but it also makes a great side for the perfect grilled steak or some grilled buttermilk chicken.

    Or if you want to amp up your lunch, add the perfect roast beef sandwich on the side, or a cup of some cool hummus soup. Mmmmm…..

    Ingredients

    Scale
    • 10 scallions
    • Olive oil
    • Sea salt
    • 20 cherry tomatoes, halved
    • 4 slices prosciutto, torn into pieces
    • 1/2 pound Burrata or fresh mozzarella cheese, torn
    • 2 cups assorted lettuce leaves
    • Balsamic vinegar

    Instructions

    1. Brush scallions with olive oil and sprinkle with sea salt. Grill over hot grill until just starting to char. Remove.
    2. Arrange lettuce, tomatoes, cheese, prosciutto and scallions on two plates. Drizzle with olive oil and a little balsamic vinegar. Serve.

      I LOVE how simple this is! That salty prosciutto paired with that subtle, soft mozzarella is the perfect combination. I would take this salad over ANYTHING on any given day ;)

      Isn’t it amazing how some of the best recipes just come together so naturally? I’m totally loving this post (and that sign)! I’m fairly certain this salad would be one of the tastiest inventions ever for a summer side dish or a summer picnic addition. I’m glad I discovered your awesome site! :-)
