    This easy recipe for watermelon burrata salad is a delicious combination of a favorite fruit, fresh herbs and cheese! Perfect with grilled steak, a lemon lobster pasta, or all on its own!

    Why we love this recipe

    This couldn’t-be-easier recipe for watermelon burrata salad was born the way so many of my recipes are…by walking by both the watermelon and the burrata cheese in my supermarket and all of the sudden having a light bulb go off in my head.

    I love salads with enough gumption that you can happily eat them as a main course, and while this watermelon salad is show-stopping side dish, it is also a totally satisfying meal all by itself.

    Sweet, salty, creamy, tangy deliciousness all in one watermelon burrata salad. Let’s make it!

    Ingredients you need

    Watermelon Burrata Salad ingredients.

    Ingredient notes and substitutions

    • Watermelon: You need about two cups of cubed watermelon, which is about one quarter of a regular sized watermelon (unless you are doubling or tripling this recipe, which I heartily endorse!). You can either cube it up yourself, or buy watermelon already cubed – look for that in your grocery store produce section. It’s more expensive but might be worth it if you are in a rush.
    • Herbs: We love basil and especially mint in this salad, but experiment with whatever herbs are your fave! Thyme would work great. Just make sure whatever herbs you use are fresh – you can find them in your grocery store produce section.
    • Burrata Cheese: More info on this creamy, dreamy cheese below, but if you can’t find it (sob!) you can use cubed fresh mozzarella instead.

    What is burrata cheese?

    Burrata Cheese is basically a piece of fresh mozzarella made into a sack. The sack is then filled with fresh ricotta and cream, then tied up so the cream and ricotta stays inside.

    So when you cut into a piece of burrata, which I encourage you to do as soon as humanly possible, the ricotta and cream spill out into a dreamy cheese extravaganza!

    Here’s how you make this recipe

    STEP 1: Cut up your watermelon into bite sized chunks and gently toss them with whatever fresh herbs you are using.

    STEP 2: Cut the burrata in half and then pull it into bite sized pieces. Nestle the burrata pieces into the watermelon salad. You can either do this on individual plates or on one pretty platter.

    STEP 3: Drizzle your watermelon salad with a little olive oil, and if you want to walk a little bit on the wild side, scatter with some red pepper flakes. And, you’re done!

    Recipe FAQs

    Can I use a different kind of melon?

    You can! As long as it has the same general consistency as watermelon, you can use whatever melon you like. You can also add strawberries and/or blueberries if you want to get extra fancy.

    Can I leave out the olive oil and/or the red pepper flakes?

    Yep! If you would rather just let the pure flavors of fruit and cheese rule the day, it’s fine to leave out that last step.

    Can this be made ahead of time?

    You can definitely chop up the watermelon ahead of time, but tearing the burrata and chopping the fresh herbs is really best done right before you serve it up for the freshest flavors.

    Ingredients

    Scale
    • 2 cups cubed watermelon
    • 1 large ball of burrata cheese
    • 1/2 cup basil leaves, chopped
    • 1/2 cup mint leaves, chopped
    • Olive oil for drizzling
    • Red pepper flakes

    Instructions

    1. Gently toss melon and herbs and divide between two plates.
    2. Cut the burrata in half and pull it into bite sized pieces, nestling the pieces into the melon cubes.
    3. Drizzle with olive oil and scatter some red pepper flakes on top.

      i’ve only had burrata once but i thought it was amazing! what a great idea to pair it with something like watermelon that greatly benefits from something salty!
