Cool Shrimp and Peach Salad

This easy breezy recipe for cool shrimp and peach salad combines tender shrimp with sweet peaches, herbs and lemon for the perfect brunch and lunch dish!

I know, you may be thinking, what the heck are shrimp and peaches doing on the same plate, but I am here to tell you that this combo of sweet peaches and tender shrimp and a light herb dressing just…WORKS.

This is one of those sweet (peaches!) and savory (shrimp!) recipes that has just the right amount of different flavors to make it come together for the perfect light lunch or summery supper.

And! It is a snap to put together, so you can spend less time in the kitchen and more time with your delectable light and lovely dinner.

  • Shrimp: We like using large shrimp for this recipe, but any size will do.
  • Peaches: Fresh local peaches are the very best if you can find them. We have also made this recipe with nectarines and apricots if you like those better.
  • Herbs: We sometimes use fresh mint instead of fresh basil…use your favorite!

How to make this recipe 👩🏻‍🍳

STEP 1: Bring a pot of water to boil and add some shrimp and some Old Bay seafood spices (the best!).   Cook the shrimp for 3 minutes or until they are just done, and then pop them in a bowl of ice water so they stop cooking.

STEP 2: Next, put some lemon juice, lemon zest,  olive oil and pepper in a small jar and shake to blend. I love mason jars for this job.

STEP 3: Drain the shrimp and put them in a mixing bowl with the peach slices.  Drizzle on the dressing and toss.  Add the chopped herbs and toss again.

Now all that’s left to do is to divide your lovely cool shrimp salad among plates, garnish with a few more herbs and serve it up!

What is Old Bay seasoning?

Old Bay is a seafood seasoning that is a mixture of celery salt, black pepper, crushed red pepper flakes, paprika and a few others. You can find it in the spice aisle of your grocery store, and it adds a delightful flavor to your shrimpies. And if you want to try your hand at mixing up your own, here’s a recipe for the homemade version!

Can this recipe be made ahead of time?

It can! We suggest waiting to drizzle on the dressing until you are ready to serve. In the meantime, keep your delectable salad cool in the fridge.

  • 1 pound medium or large shrimp, peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • Juice and zest from one lemon
  • 2 tablespoons olive oil
  • ½ teaspoon pepper
  • 4 peaches, pitted and cut into wedges
  • ½ cup fresh basil or mint, chopped, with extra for garnish
