    Blue Cheese Shrimp

    This recipe for blue cheese shrimp is an easy and elegant combination of seafood with buttery blue cheese sauce, perfect for your next dinner party!

    Why we love this recipe

    Shrimp, shrimp, shrimp….what else can I tell you about shrimp that I haven’t said a hundred times before?  

    How about that if you make it with a lovely light gorgonzola sauce and serve it over a pile of buttered rice, all your cares will magically disappear for at least as long as you are at the dinner table?

    The sauce itself is a very light and barely there coating of buttery cheese, just enough to give the shrimp a little creamy blue cheese zing.  It all cooks up in the same skillet and is ready in about 15 minutes (not kidding), which makes it even more scrumptious.

    This seafood supper is lovely over rice, polenta, mashed potatoes, farro…the mind spins!  So the next time you need a quick and delicious elegant dinner for any reason at all…shrimp with gorgonzola sauce!

    Ingredients

    Scale
    • 8 ounces large shrimp, peeled and deveined
    • 2 tablespoons butter
    • 1 minced garlic clove
    • 1 1/2 tablespoons fresh lemon juice
    • 1/2 cup crumbled gorgonzola cheese
    • Chopped fresh parsley
    • Fresh ground pepper

    Instructions

    1. Melt butter with garlic in large pan over medium high heat, and saute shrimp until opaque. Add cheese and lemon juice and stir until cheese is just melted.
    2. Serve over rice, garnished with parsley and fresh ground pepper.

      Wow! What a time of it you’ve all had. Glad to hear that your dear ones are recovering! When I was a kid, my father bought my mother a very large box of chocolate covered cherry cordials for Valentine’s Day. The family went out for a nice dinner to come home to a not so nice surprise on the floor. Our dog had eaten the entire box of chocolates – minus three pieces. Luckily, he did the “reversing” himself and we did not have to bring him to the vets. So, I remember this and feel your pain…

      SHRIMP! You had me at shrimp. This dish sounds so delish and I see that you have many more delectable shrimp dishes on site. My son just mentioned that he wanted some shrimp. We’ll have to try this one. Thanks for a great recipe.

      What a simple but elegant meal! This looks easy enough for a fun weeknight dinner but definitely lovely enough for company – can’t wait to try it out! And can’t stop giggling about your sweet pup in those socks – too cute :) (And I’m not at all surprised that she learned nothing from her chocolate binge. Silly dogs…)

        She was a good sport about wearing the socks – I think she was hoping if she cooperated she would get another run at the chocolate. NOT!! :)
