    Why we love this recipe

    This delectable recipe for easy creamy shrimp piccata is definitely high on the list of my very favorites, for all kinds of reasons.

    First off, it is just plain scrumptious.

    Second, it is ready in about 20 minutes from walk into the kitchen to sit down and dig in.

    Third, it is equally wonderful for either an elegant dinner party or a busy weeknight (because of the whole ready-in-20-minutes part).

    And last but definitely not least, the Southern husband’s eyes light up whenever I mention the words “Piccata” and “Dinner” in the same sentence, and I do love to see those eyes light up!

    Anyway, shrimp piccata!

    What does piccata mean in cooking?

    Piccata is an Italian dish of thin pan-fried flour-dredged meat in a sauce of lemon juice, butter, parsley and capers.  The meat is traditionally veal, but sometimes this sauce is used with chicken…and in this case we are using shrimp!

    Here’s how you make this recipe

    You start with a pile of peeled shrimp – I go for the large size, but any size will work.  Saute them in some butter and olive oil until they are just done, and then scoop them out.

    Now deglaze that shrimp skillet with some white wine, and then pour in some lemon juice and cream and let that simmer for a few minutes.

    Add the shrimp back in along with some parmesan cheese and capers and stir it all around until everything is heated through.

    And that’s it.  Seriously.  You’re done.

    I like to serve this with asparagus, but we’ve also had it with sesame lime rice, and over polenta, and of course over a bed of steaming hot pasta.  I told you it was one of my very faves!

    Now go make yourself this speedy dinner party level supper, because you’re worth it!

    Ingredients

    Scale
    • 1 1/2 pounds shrimp, peeled and deveined
    • 1/4 cup olive oil
    • 2 tablespoons butter
    • 1/2 cup white wine
    • Zest and juice from one lemon
    • 1/2 cup heavy cream
    • 1/2 cup grated parmesan cheese
    • 1/4 cup capers
    • Chopped fresh parsley for garnish

    Instructions

    1. Put the olive oil and butter into a large skillet over medium high heat until the butter is melted.
    2. Add the shrimp and cook until just done, about 2-3 minutes depending on the size of your shrimp.  Remove from the skillet and set aside.
    3. Add the wine and stir for a minute, scraping up any browned bits from the bottom of the pan.  Add the lemon juice and cream and simmer for 3 minutes.
    4. Return the shrimp to the pan along with the parmesan cheese and capers and simmer for a minute or two until everything is heated through.
    5. Divide the shrimp among plates, ladle a generous amount of sauce on top and garnish with parsley and lemon zest.  Serve at once.
