This easy breezy recipe for chilled shrimp and peach salad combines tender shrimp with sweet peaches, mint and lemon for the perfect brunch and lunch dish!
Before I get into the summery scrumptiousness that is this chilled shrimp and peach salad, I have an announcement.

Actually the amazing folks at Hearthstone Luxury Homes built it, but a couple of days ago it got finished, and they gave us the keys, and I still kind of can’t believe it that the Carolina Dream House is now our home.

Meantime, while we get ready for our Move Part Two (I wonder how all our stuff in New Jersey storage is feeling these days?) I’m thinking some celebration with shrimp and peaches might be in order!
Here’s how you make chilled shrimp and peach salad!
Bring a pot of water to boil and add some shrimp and some Old Bay seafood spices (the best!).
While you are waiting for the water to boil, slice up a few peaches. Sneak a slice for yourself.
Cook the shrimp for 3 minutes or until they are just done, and then pop them in a bowl of ice water so they stop cooking.
Next, put some lemon juice, lemon zest, olive oil and pepper in a small jar and shake to blend. I love mason jars for this job.
Drain the shrimp and put them in a mixing bowl with the peach slices. Drizzle on the dressing and toss. Add the chopped mint and toss again.
Fresh mint is the best!
Now all that’s left to do is to divide your lovely cool shrimp salad among plates, garnish with a few more mint leaves and serve it up!
This is definitely going on the menu for the early days in my new Carolina kitchen!

Ingredients
- 1 pound medium or large shrimp, peeled and deveined
- 1 tablespoon Old Bay seasoning
- Juice and zest from one lemon
- 2 tablespoons olive oil
- ½ teaspoon pepper
- 4 peaches, pitted and cut into wedges
- ½ cup fresh mint, chopped, with extra for garnish
Instructions

House looks gorgeous! Can’t wait to see your very looooooonnnngggg post of the Grand Opening Tour photos! Shrimp is not my favorite but love the look of those peaches. I’ll stick to eating my peaches with some gingersnaps, Russian-style farmer’s cheese and a lovely dessert wine. That will leave more shrimp for you folks that like it. :)
