Crispy Bread Crumb Fried Eggs

This simple recipe for crispy bread crumb fried eggs adds some tasty crunch to your breakfast. It’s like having your toast right in with your eggs!

I know it is a well established fact around these parts that I love bacon with a ridiculous amount of love, but I also adore eggs, and I would put toast up there in my top five favorite things to eat, morning noon or night.

And so one of my favorite things to do with eggs and toast is to combine them in one perfect bite, and the very best way to do this is with crispy bread crumb fried eggs.

It’s fried eggs cooked in a pile of golden bread crumbs that cook right into the sides and bottom of the eggs.

It’s a mouthful of creamy eggy crunchy toast wonderfulness in each bite.

It’s mandatory for eggs and toast lovers.  Let’s make it!

Here’s How You Make Crispy Bread Crumb Fried Eggs!

First, get your mitts on some eggs.  The recipe below makes one two egg serving, but you can easily increase it depending on how many egg and toast lovers you are cooking for.

You also need some bread crumbs.  I use panko bread crumbs when I make this, because as anyone who has been to a diner with me can tell you, I like my toast WELL DONE, and panko bread crumbs are already dried out.

(Side note: Even though I literally say “please can I have my toast well done?  Seriously, please BURN IT!” it almost always comes back a medium golden color.

Same with grilled cheese sandwiches.  To the point that when they actually do send it out just this side of burnt, I make a special effort to send my compliments to the toast chef. Yeesh.)

Anyway, if you are a person who likes your toast very gently toasted, you might want to use fresh bread crumbs for this instead of panko, but one way or the other, get your mitts on some bread crumbs.

Now!  Heat up a little canola oil in your favorite skillet and add your bread crumbs.  Stir them around until they are just starting to get golden, and then divide them into two egg-sized circles.  Roughly. No measuring required.

Crack your eggs onto those breadcrumb circles, cover the skillet and cook the eggs up to your liking.  My liking is soft set, which takes about 5 minutes or so.

If you are an over easy person rather than a sunny side up person, you can definitely give them a flip the way you always do.

It won’t look as pretty but it will still taste all kinds of delectable.

Now, IMPORTANT NOTE: Some of the breadcrumbs on the side are going to get burnt.  This is a-ok – they are serving as a kind of buffer for the other crumbs that are under them and next to them.

If you like burnt toast (raises hand!) you can sprinkle them on top.  Otherwise toss them out for the birdies and you will be their new best friend!

Now slide your spatula under the breadcrumb layer and slide your beautiful crispy bread crumb fried eggs onto a warmed plate.  Sprinkle any crumbs that are still in the skillet over your eggs.

As you can see, I gave those extra crumbs a little bit of extra time in the skillet because I happen to like my crumbs WELL DONE.  :)

Now take a bite, and revel in that creamy, crunchy, all-in-one deliciousness.  Realize that the only way this breakfast could get better is if you have a heaping pile of bacon on the side.

Description

Ingredients

  • 1 tablespoon canola oil
  • ½ cup panko breadcrumbs
  • 2 eggs

Instructions

  1. Pour oil into a skillet over medium high heat. Add the breadcrumbs and stir until they are just turning brown.  Now divide them into two roughly egg-sized circles, trying to get the crumbs in a single layer.
  2. Crack an egg on top of each breadcrumb circle.
  3. Loe the heat to medium low, cover the skillet and cook until the egg is done to your liking (4-6 minutes for soft set eggs, which is my favorite!). If you are feeling extra feisty, you can flip it over so the eggs are over easy and the breadcrumbs are on the top!
  4. Sprinkle with salt and pepper, top with any of the crispy bread crumbs left in the pan and serve!
