Bread Crumb Fried Eggs

This simple recipe for crispy bread crumb fried eggs adds some tasty crunch to your breakfast. It’s like having your toast right in with your eggs!

Ingredients

  • 1 tablespoon canola oil
  • ½ cup panko breadcrumbs
  • 2 eggs

Instructions

  1. Pour oil into a skillet over medium high heat. Add the breadcrumbs and stir until they are just turning brown.  Now divide them into two roughly egg-sized circles, trying to get the crumbs in a single layer.
  2. Crack an egg on top of each breadcrumb circle.
  3. Loe the heat to medium low, cover the skillet and cook until the egg is done to your liking (4-6 minutes for soft set eggs, which is my favorite!). If you are feeling extra feisty, you can flip it over so the eggs are over easy and the breadcrumbs are on the top!
  4. Sprinkle with salt and pepper, top with any of the crispy bread crumbs left in the pan and serve!

Notes

Now, IMPORTANT NOTE: Some of the breadcrumbs on the side are going to get burnt.  This is a-ok – they are serving as a kind of buffer for the other crumbs that are under them and next to them.

If you like burnt toast (raises hand!) you can sprinkle them on top.  Otherwise toss them out for the birdies and you will be their new best friend!
