Pasta with Creamy Spinach Hummus Sauce

This easy recipe for pasta with creamy spinach hummus sauce takes your favorite dip and transforms it into a rich sauce without a drop of cream. Dinner magic!

I have this strange relationship with chick peas, in that I really, really don’t like them…except when they are made into hummus, in which case I can’t get enough of them.  

Especially my beloved recipe for five minute hummus !

I am hummus-obsessed.  So it was only a matter of time before I needed to turn it into a pasta sauce, and guess what?

Hummus sauce on pasta is a scrumptious miracle, because it coats your pasta in a creamy, dreamy, flavor-iffic sauce without one drop of cream.  And speaking of dreamy….

Anyway, let’s get back to the hummus sauce!

  • Pasta
  • Baby Spinach
  • Hummus
  • Lemon
  • Butter
  • Parmesan Cheese
  • Parsley
  • Black Pepper

Here’s how to make this scrumptious healthy Pasta

STEP 1: Cook up 8 ounces of pasta according to package directions – any kind will do but I am partial to short pasta in this recipe. Think penne or bow-ties.

STEP 2: Drop 4 cups of of baby spinach in the pasta water during the last minute of cooking, because we need to get our veggies in there, and it adds a lovely fresh zing to this pasta.

STEP 3: When the pasta is done, add in the hummus (store-bought hummus is fine, but I promise you can make your own in 5 minutes – here is that recipe!) along with some lemon juice and a smidge of butter and parmesan cheese.  

STEP 4: Drizzle in a little of the pasta water that you have cleverly saved, mix it all up together and voila!

What makes pasta cooking water so special?

When pasta cooks, it releases starch into the water (that is what makes it a little cloudy. And since hopefully you have thoroughly salted your water, at the end of the pasta cooking time you have a starchy, salty water that is ABSOLUTELY PERFECT for making or loosening up a light pasta sauce. It’s truly magical.

Can I use any variety of hummus for this recipe?

You can! I sometimes make it with red pepper hummus for a little more zing. Experiment to find your favorite.

Can I swap out a different vegetable for the spinach?

I know, my crowd is not a spinach-loving group either (but I am!) You could use pre-cooked broccoli or green beans instead.

Ingredients

Scale
  • 8 ounces pasta (we like a short pasta like penne or campanelle, but you be you!)
  • 4 cups baby spinach
  • ½ cup hummus
  • Juice from ½ lemon
  • 2 tablespoons butter
  • ½ cup grated parmesan, plus extra for garnish
  • Chopped fresh parsley for garnish
  • Fresh ground black pepper

Instructions

  1. Cook pasta according to package directions in salted water. Add the spinach to the pasta during the last minute of cooking. Scoop out a cup of pasta water before you drain it.
  2. Return the pasta to the pot and add the hummus, lemon juice, butter and cheese. Drizzle in just enough of the reserved pasta water to make a light sauce.
  3. Divide among plates, garnish with parsley, cheese and a grinding of black pepper and serve!

  1. Those guys!! Love that pic! And this pasta sounds heavenly! I could probably eat pasta every day and not get tired of it. And here you are, mashing up supper time with snack time and making pasta even more appealing! I like my hummus topped with a generous handful of toasted pine nuts so those will be going here as well and that will be my little spin on your already fabulous recipe. Happy Friday, Kate!
