This recipe for chopped Brussels sprouts with feta cheese may be among the most exciting things I have ever written about on my blog.  

Maybe not to you, although I think you are going to fall head over heels for crispy, tender chopped sprouts mixed with tangy feta cheese and roasted walnuts.

But for me, it is a personal and hard-won triumph in that I have converted the Southern husband over to the Brussels Sprouts Side.  

Up until now, I had to sneak them into things like chicken salad with Brussels sprouts, and even that didn’t really work.

But this is a bona-fide all Brussels sprouts all the time side dish where the sprouts are front and center…and he likes it!  He really likes it!  My work is hereby finished.  Except for…let’s make some!

Ingredients you need to make this brussels sprouts side dish!

  • Brussels Sprouts
  • Olive Oil
  • Salt and Pepper
  • Walnuts
  • Feta Cheese

Here’s how you make chopped Brussels sprouts with feta cheese!

Get yourself a pile of Brussels sprouts, trim them up and chop them up in your food processor. You want them in pretty small bits and pieces/

Chopped Brussels Sprouts with Feta Cheese

Toss them with with some olive oil and salt and pepper, stir in some chopped walnuts and broil them until both the sprouts and the walnuts star to look a little charred in places.  Charred is very good.

Now transfer them to a bowl and toss them with some crumbled feta cheese.  

Drizzle this bowl of wonderfulness with a little more olive oil and a sprinkle of sea salt and fresh ground pepper. And…you’re done! You have reached peak Brussels sprouts deliciousness.

How do I trim Brussels sprouts?

Grab your handy paring knife and slice off that little woody bit at the bottom, and if there are any brown or wilting leaves on the outside, tear those off as well. You’ve now trimmed your Brussels sprouts!

Can I use a different kind of nut for this recipe?

You can! Chopped pecans or macadamia nuts would both be heavenly. Or you can leave them out altogether if you are making this for someone who can’t eat nuts.

Where do I find feta cheese?

Feta cheese is usually in the “fancy cheese” section of your grocery store, and usually comes either in a block or already crumbled. I highly recommend getting the block and crumbling it yourself – it is much creamier and fresher that way. Chopped Brussels Sprouts with Feta Cheese

Description

This recipe for roasted chopped Brussels sprouts with feta cheese and walnuts is GUARANTEED to make a Brussels sprouts lover out of anyone!


Ingredients

  • 4 cups Brussels sprouts, trimmed and cut in half
  • 1/4 cup olive oil, plus extra for drizzling
  • Sea salt and pepper
  • 1 cup chopped walnuts
  • 1 cup feta cheese, crumbled

Instructions

  1. Line a rimmed baking sheet with foil and preheat the broiler.
  2. Pulse the sprouts in your food processor until they are roughly chopped.
  3. Toss the chopped sprouts with olive oil and walnuts and spread in a layer on the baking sheet. Broil just until the sprouts and the nuts look a little charred in places, about 10 minutes.
  4. Transfer to a serving bowl and toss in the feta. Drizzle with a little more olive oil, sprinkle with a little more sea salt and pepper and serve.

    i’ve not tried brussels sprouts in their chopped form, so that’s definitely worth a go, especially if walnuts and feta are also involved. i really like the looks of this one!

    I’ve been avoiding cooking Brussels sprouts for the last little while, since last year we lived in a really tiny apartment (and I mean miniscule!), so the last time I made them the whole place smelled really cabbagey and it wouldn’t air out! It was a real shame, because I absolutely love them. Fortunately we live in a much bigger, two-bedroom place now with a generous-sized kitchen, so I think I’ll start making them again to go with dinners soon. I love your idea of chopping them up and tossing delicious feta cheese through them, Kate…sounds AMAZING!

    Happy St. Patty’s day, Kate! My love for brussels runs DEEP, and I happen to think this dish is absolutely PERFECT for today! I mean they are green… and totally delicious!     They do enjoy Brussels sprouts in Ireland…I remember that my brothers had a fairly steady diet of them when they were at Blackrock College. Probably resisted them……..
