Well, we all know what’s coming up in just a few short days, right? Yep, the most festive day of the year for those of us with Irish blood in our veins, and probably a few of the rest of you too.
And while I will do my ancestral duty by eating scones and Irish bread and various forms of things made with Guinness, I figured it wouldn’t hurt to shake things up a little by introducing a little something unexpected into our week of Irish eats. Here’s an Irish grilled cheese sandwich for you!
And before this recipe makes you think I’ve been fibbing to you all this time about being a good Irish girl, here is a picture of me kissing the Blarney Stone oh so many years ago.

Anyway, the reason I get to call this grilled cheese Irish is because I made it with this…
I love everything and anything Kerrygold, so if you can find this cheese I highly recommend it, but Irish cheddar will do you just fine as well.
You also need rashers (which is Irish for meaty, thick-cut bacon, and in a pinch regular bacon is pretty wonderful too), and a nice tomato.
Here’s how you make Irish grilled cheese sandwiches!
Butter a couple of slices of your favorite bread (I like Pullman style bread for grilled cheese, but you be you) and assemble as follows: slices of cheese, strips of cooked bacon, thin slices of tomato, more cheese, top with second piece of bread.
Now, the key to wonderful golden melty grilled cheese is to cook it over medium to medium low heat in your skillet or on your griddle.
You don’t want the outside to get too toasty before all the insides are sufficiently gooey. If you cook it gently and slowly, everything will be golden and melted all at the same time.
Slice it in half, take a bite, and may the road rise to meet you!

Ingredients
- 4 slices bread (I like Pullman bread for this recipe)
- Soft butter
- 4 ounces sliced Irish cheddar
- 2 slices thick cut bacon, cut in half and cooked until crisp
- 1 tomato, sliced thinly
Instructions
- Butter one side of each slice of bread
- Assemble as follows: slice of bread butter-side-down, cheese, bacon, tomato, more cheese, second slice of bread butter-side-up.
- Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until golden on one side. Carefully flip and cook until golden on the other side.
- Remove, cut in half and serve.
Love Kerrygold butter and use it frequently, but it’s a lot more expensive than British butter here.
I’ve never heard of rashers meaning thick cut bacon. It means a slice of bacon, as in one piece of streaky bacon, like regular American bacon or one piece of back bacon, which is thicker and like Canadian bacon.

I only eat corned beef once a year (you guessed it; St. Paddy’s Day) and I guess it’s just one of those traditional things I do even though I don’t necessarily LOVE it. But you had me at grilled cheese! Love the idea of this!

I am loving this whole grilled cheese post. So many good recipes. I didn’t realize that I have been making Irish Grilled Cheese sandwiches for years. Like you, I love all things Kerrygold; and I do love their Dubliner cheese. But, my favorite one is their Blarney Castle cheese. Let’s all be thanking the Little People for Kerrygold!🍀
