There’s nothing that warms my hungry little heart quite like a good old grilled cheese sandwich.  I do love the classic, made with buttered bread and American cheese, but I also like to push those grilled cheese boundaries, which has taken me everywhere from macaroni and cheese grilled cheese sandwiches to grilled cheese croutons

But this open-faced lobster sandwich covered in melty Brie cheese?  I may have finally found the pinnacle of grilled cheese sandwich heaven.

I know, this recipe doesn’t include technically grilling the cheese…it melts in the oven… but I figure warm and wonderful melty cheese?  Close enough. 

This is a dramatic first course for a dinner party, and a lovely, brighten-up-your-weekday dinner with a salad on the side if you are just feeling like kicking things up a notch on a Tuesday night.

And personally, I am ALWAYS game for kicking things up a notch, especially if it means I get away with serving grilled cheese for supper.

And if the prospect of tucking into one of these isn’t glorious enough, it’s also ridiculously easy to make!

  • Lobster: You need about 1 1/2 cups of cooked lobster meat for this recipe, which you can get by buying cooked lobster meat (look in the frozen seafood section of your grocery store) or by cooking up and shelling one lobster.
  • Brie Cheese: Look for this creamy cheese in the fancy cheese section of your grocery store.
  • Bread: Either Italian or French bread will work for this recipe.

👩🏻‍🍳 How to make this recipe

STEP 1: Preheat oven to 425.

STEP 2: Line a cookie sheet with foil.

Bread slices spread with mustard.

STEP 3: Now take a loaf of French or Italian bread and slice it on the diagonal into 1/2 inch slices.  Six slices is just about right for one lobster’s worth of meat.

Now spread the bread with a little bit of grainy mustard, which is going to give your sandwich just the right amount of zing.

STEP 4: Top it with a slice or two of Brie cheese. We leave the rind on but you can cut it off if you like.

STEP 5: Pop the sandwiches onto a foil-lined cookie sheet and into the oven, just long enough so that the cheese melts gloriously over the lobster, about 5 to 10 minutes.

Recipe FAQs

Can I use lobster tails instead of a whole lobster?

Absolutely. Cooked lobster tails are an easy option and often easier to find than whole lobsters. You’ll need about 1½ cups of cooked lobster meat.

Can I use frozen lobster meat?

Yes! Frozen cooked lobster meat works very well for this recipe. Just thaw it completely and pat it dry before using so the sandwiches don’t become watery.

Do I need to remove the rind from the Brie?

No. The Brie rind is completely edible and melts nicely in the oven. If you prefer a smoother texture, you can trim it off before slicing.

What can I substitute for Brie?

f you’re not a Brie fan, try Camembert, Fontina, Havarti, Gruyère, or a mild white cheddar. Each melts beautifully and pairs well with lobster.

Can I make these ahead of time?

These sandwiches are best served fresh while the cheese is hot and melty. You can prep the ingredients a few hours ahead, then assemble and bake just before serving.

  • 1 lobster, steamed (which you can ask your supermarket to do for you), meat removed and torn into bite sized pieces, or 1 1/2 cup cooked lobster meat.
  • 6 slices of Italian or French bread, cut from the loaf on the diagonal
  • Grainy mustard
  • 1/4 pound Brie cheese (and yes, you can leave the rind on)
  • Freshly ground pepper

Instructions

  1. Preheat oven to 425 and line a cookie sheet with foil.
  2. Spread the bread slices lightly with mustard.
  3. Divide lobster chunks among the bread slices, and top with cheese.
  4. Bake until cheese is melted, anywhere from 5-10 minutes. Watch it closely.
  5. Remove sandwiches to a platter with a spatula. Grind pepper on top and serve at once.
