    Lobster and Brie Grilled Cheese Sandwiches

    Grilled cheese will never seem the same after you try this lobster and brie grilled cheese sandwich recipe!

    There’s nothing that warms my hungry little heart quite like a good old grilled cheese sandwich.  I do love the classic, made with buttered bread and American cheese, but I also like to push those grilled cheese boundaries, which has taken me everywhere from macaroni and cheese grilled cheese sandwiches to grilled cheese croutons. 

    But this open-faced lobster sandwich covered in melty Brie cheese?  I make have finally found the pinnacle of grilled cheese sandwich heaven.

    And if the prospect of tucking into one of these isn’t glorious enough, it’s also ridiculously easy to make…assuming you can get someone to crack the lobster for you. 

    I am lucky enough to be married to someone who will happily go to the supermarket (where they will steam the lobster for you), bring it home, crack it open and pull out the lobster meat for me.  Of course, he DOES get a lobster and Brie sandwich at the end of all this, but still.  He gets props anyway.

    Once you have your lobster meat, tear it into bite sized pieces.  Now take a loaf of French bread and slice it on the diagonal into 1/2 inch slices.  Six slices is just about right for one lobster’s worth of meat, and of course this can be multiplied endlessly. 

    Now spread the bread with a little bit of grainy mustard, which is going to give your sandwich just the right amount of zing, and top it with a slice or two of Brie cheese.

    Pop the sandwiches onto a foil-lined cookie sheet and into the oven, just long enough so that the cheese melts gloriously over the lobster.  

    I know, this is not technically grilling the cheese, but I figure warm and wonderful melty cheese?  Close enough.  Take them out and grind a little pepper on top.

    This is a dramatic first course for a dinner party, and a lovely, brighten-up-your-weekday dinner with a salad on the side if you are just feeling like kicking things up a notch on a Tuesday night.

    And personally, I am ALWAYS game for kicking things up a notch, especially if it means I get away with serving grilled cheese for supper!

    Ingredients

    Scale
    • 1 lobster, steamed (which you can ask your supermarket to do for you), meat removed and torn into bite sized pieces
    • 6 slices of French bread, cut from the loaf on the diagonal
    • Grainy mustard
    • 1/4 pound Brie cheese (and yes, you can leave the rind on)
    • Freshly ground pepper

    Instructions

    1. Preheat oven to 425 and line a cookie sheet with foil.
    2. Spread the bread slices lightly with mustard.
    3. Divide lobster chunks among the bread slices, and top with cheese.
    4. Bake until cheese is melted, anywhere from 5-10 minutes. Watch it closely.
    5. Remove sandwiches to a platter with a spatula. Grind pepper on top and serve at once.
