Treat yourself to lobster grilled cheese made with creamy Brie. An elegant and easy option for dinner parties or light lunches.

Ingredients

  • 1 lobster, steamed (which you can ask your supermarket to do for you), meat removed and torn into bite sized pieces, or 1 1/2 cup cooked lobster meat.
  • 6 slices of Italian or French bread, cut from the loaf on the diagonal
  • Grainy mustard
  • 1/4 pound Brie cheese (and yes, you can leave the rind on)
  • Freshly ground pepper

Instructions

  1. Preheat oven to 425 and line a cookie sheet with foil.
  2. Spread the bread slices lightly with mustard.
  3. Divide lobster chunks among the bread slices, and top with cheese.
  4. Bake until cheese is melted, anywhere from 5-10 minutes. Watch it closely.
  5. Remove sandwiches to a platter with a spatula. Grind pepper on top and serve at once.

Notes

    • Lobster: You need about 1 1/2 cups of cooked lobster meat for this recipe, which you can get by buying cooked lobster meat (look in the frozen seafood section of your grocery store) or by cooking up and shelling one lobster.

    • Brie Cheese: Look for this creamy cheese in the fancy cheese section of your grocery store.

    • Bread: Either Italian or French bread will work for this
