    Easy Banana Bread Ice Cream

    This recipe for easy banana bread ice cream tastes just like your favorite snack bread, and doesn’t need an ice cream maker, just some ripe bananas, some cinnamon and vanilla and your freezer. The perfect simple and healthy and tasty dessert!

    I’m guessing you already know the magic that is freezing up some ripe bananas, whirling them in your food processor and having the bananas magically turn into the healthiest ice cream on the planet.  But did you know that with just a couple of additions, it can take on the flavor of banana bread?

    Yep.  Everyone’s favorite snacking bread, scrumptious banana bread, but in ice cream form.  You follow the same basic principle of taking those ripe bananas that everyone has abandoned because they have a speck of brown on the peel, peeling them and cutting them into one inch chunks.

    I like to put them on a cookie sheet that has been lined with silicone baking sheet or parchment paper because you are going to freeze these babies SOLID, and it’s easier to take them off that way.

Click to Tweet Do let them freeze until they are like little banana rocks – overnight is your best bet – and then pop them into your handy food processor.  And here is the trick: add in a little vanilla and a little cinnamon.  Those two tiny additions are going to take this deliciousness from banana ice cream to banana BREAD ice cream.  It’s downright magical.  Now push the button on the food processor and let it rip until you everything is nice and smooth.

    Now, since I tend to make my banana bread with nuts, I like to sprinkle walnuts (on mine) or pecans (on the Southern husband’s), and you can even stir them into this ice cream, because it is going to be a lovely soft serve consistency.  One way or the other, get ready for the folks in your house to all of the sudden be super interested in those aging bananas.  Because we all scream for ice cream!

    Ingredients

    Scale
    • 4 ripe bananas
    • 1/2 tsp cinnamon
    • 1/2 tsp vanilla extract
    • ½ cup chopped walnuts or pecans (optional!)

    Instructions

    1. Cut bananas into chunks and freeze until completely solid.
    2. Put bananas, cinnamon, allspice and vanilla extract into a food processor. Process until smooth.
    3. Stir in nuts (if using) and serve!

      Well I just so happen to have a freezer bag of banana chunks already frozen because I don’t like food to go to waste. They were going to go in smoothies but ice cream sounds much better, especially when it is banana bread ice cream! Thank you!
