    Chicken Bog

    What is Chicken Bog?

    What on earth is chicken bog, you ask?  Chicken Bog is a hearty and comforting Southern dish, particularly popular here in the Carolinas. It’s a one-pot meal that combines tender chicken, flavorful sausage, and rice with a savory broth.

    The dish gets its name from the word “bog,” which refers to the soft, wet consistency of the rice after it absorbs the rich cooking liquid. In other words, a delicious comfort food!

    How to make this recipe

    You take some bone-in chicken pieces and simmer them up in water or chicken broth (I like using chicken broth to ramp up the chicken-y flavor) until the chicken is fully cooked.  Scoop it out and let it cool.  

    Now you want to chop up an onion and slice up some kielbasa or other smoked sausage and pour it into the leftover broth.  Turn up the heat and once things are boiling, pour in some rice.  Cover the pot and let things simmer until the rice is done.

    At this point, the rice will absorbed all the liquid and it will be delectably soft and flavorful.  Shred the cooked chicken and stir it into the rice mixture along with some salt and pepper.

    At this point, you can get creative about what you want to add…barbecue sauce, shredded cheese, BUTTER.  I decided to give the Southern husband his bowl of chicken bog with a drizzle of spicy Sriracha sauce, and he was about one hundred kinds of happy.

    As for me?  I put a dollop of soft homemade butter on mine, and I pretty much wanted to die of chicken bog happiness.

    Ingredients

    Scale
    • 2 bone-in chicken thighs or chicken breast halves
    • 4 cups water or chicken broth
    • 2 cups sliced kielbasa or other smoked sausage
    • 1 sweet onion, peeled and chopped
    • 2 cups rice
    • Salt and pepper to taste
    • Your choice of toppings! Bbq sauce, shredded cheese, hot sauce or butter are all great.

    Instructions

    1. Place chicken and broth or water in a heavy deep pot and bring to a simmer. Cover and simmer until the chicken is fully cooked, about 45 minutes. Remove chicken and cool. When it is cool enough to handled, shred the chicken into bite sized pieces, discarding the bones.
    2. Add the sausage and onion to the broth and heat to a simmer. Add rice, cover and simmer until rice is tender, about 25 minutes. Stir the mixture periodically, adding a little water if needed as the rice cooks.
    3. When the rice is done, stir in the shredded chicken and season to taste with salt and pepper. Serve as is, or with your choice of toppings.
    4. Eat way too much because you just can’t help yourself.

      Hilarious name! If that’s not comfort food, then I don’t know what is! I think topping this off with an egg or two will put me in heaven! My favorite dish that my mom makes for me is oxtail. OMG! I drool just thinking about it. And wow, those book covers are gorgeous!

      Chicken bog seems to be really delicious. I’m gonna tell my mom about that. She would surely love to try another recipe! Anyway, my favorite family recipe is lasagna. My mom always cooks it with a different twist. And when I ask her what that is, she just smiles back at me. Ah! I both hate and love that feeling. You know what I mean, right? My mom can’t just break the element of surprise. But above all else, I think I liked that idea. Trust me, I’ll tell my mom to do this too. ????

      I have never heard of chicken bog before, but a conglomeration of rice, sausage, shredded chicken and onion sounds delicious to me! So cozy and perfect for this crazy weather we are having!       This may sound crazy, but vegetable soup is the favorite pass down recipe and the one that my son’s wives call me most often about! I think the secret ingredient in the soup is the homemade canned tomato juice! Makes it delicious. My next step is to teach my daughter-in-laws how to can so I am not continually passing out my treasured tomato juice to them!! :)

      My favorite family recipe is “Green Junk” or the healthy version of watergate salad made with yogurt, pineapple, pecans, and pistachio pudding. We leave out the whipped cream and marshmallows and eat this for dessert or breakfast year round.

      I didn’t have family pass down recipes to me, but learned to cook and bake from taking classes, watching an obscene amount of the Cooking Channel, and scouring recipe websites. Comfort food to me is homemade soup and bread (slathered with Irish butter,) or an all-day cooked meat sauce for spaghetti. With fresh bread and lots of butter. Okay- maybe the easy answer is fresh baked bread slathered with an obscene amount of Irish butter. LOL

      This is such a funny name! I’ve never heard of this before, but whatever you call it, it sounds DELICIOUS!! And how awesome for your friend with all the best selling books! I agree that curling up with a big bowl of this chicken bog and one of this books would be a fantastic idea….great way to spend the afternoon for sure. Favourite family recipe for me? So many, but I would definitely, hands down, say that the Christmas Day turkey dinner that my mother makes. I look forward to it every year! xoxo
