    Banana Graham Cracker Muffins

    This easy recipe for banana graham cracker muffins takes two of your favorite flavors and turns them into a muffin! Perfect for breakfast or snack time.

    Why we love this recipe

    I don’t know about you, but I don’t think I have ever in my life bought a bunch of bananas that didn’t result in a couple of extra-ripe ones languishing on the end of the banana stand.  

    And while I love my various ripe banana recipes (I’m looking at you, banana jam!) it’s a personal mission of mine to come up with ever-changing ways to use up those ripe bananas.

    And so please meet these comforting and scrumptious banana graham cracker muffins, a mash-up of two of my very favorite flavors.  

    These are a mixture of bananas, graham cracker crumbs and a few other ingredients that I bet you have in your pantry right this minute.  They bake up in no time and make your kitchen smell all kinds of delicious.

    How to make this recipe

    Preheat the oven to 400 and line a 12 cup muffin tin with paper muffin cups.  Spray the muffins cups with cooking spray.

    Put the graham crackers in a zippered plastic bag and crush them with a rolling pin or meat tenderizer until they are in fine crumbs.  You should have about 2 1/2 cups.

    Put the graham crumbs in a mixing bowl and add the sugar, flour and baking powder.

    Mix up the egg, milk and bananas in a separate bowl and then add to the graham mixture.  Divide the batter between the 12 lined muffin cups.  If you are using the nuts, sprinkle them on the top.

    Bake for 15-20 minutes or until a toothpick stuck into the center of the muffin comes out cleanly.  Cool on wire racks.

    PRO TIP: Want to make these muffins even sweeter? Mix a cup of powdered sugar with 2 tablespoons of milk and a half teaspoon of vanilla extract and drizzle it over your baked muffins.

    Ingredients

    Scale
    • 18 graham cracker sheets (see note)
    • 1/4 cup brown sugar
    • 1/2 cup flour
    • 2 teaspoons baking powder
    • 1 egg
    • 1 cup milk
    • 2 very ripe bananas, mashed with a fork
    • 1/4 cup chopped walnuts or pecans (optional)

    Notes

    One graham cracker sheet means the two square graham crackers before they are broken apart.  I used Nabisco Honey Grahams for this recipe.

      Love this twist on banana muffins! I always have bananas around that get just a bit too ripe and this recipe came out amazing!

      Perfect timing! I’ve got two bananas on the counter right now that are just this side of too ripe for anything. Love your addition of graham crackers! Could we make these a little s’mores-ish and add in some mini chocolate chips? :) If I lived closer, I would certainly work on invitations, just to get to drink red wine hot chocolate.
