Banana Graham Cracker Muffins

This easy recipe for banana graham cracker muffins takes two of your favorite flavors and turns them into a warm and wonderful muffin! Perfect for breakfast or snack time.

  • 18 graham cracker sheets (see note)
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 2 very ripe bananas, mashed with a fork
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 400 and line a 12 cup muffin tin with paper muffin cups.  
  2. Put the graham crackers in a zippered plastic bag and crush them with a rolling pin or meat tenderizer until they are in fine crumbs.  You should have about 2 1/2 cups.
  3. Put the graham crumbs in a mixing bowl and add the sugar, flour and baking powder.
  4. Mix up the egg, milk and bananas in a separate bowl and then add to the graham mixture.  Divide the batter between the 12 lined muffin cups.  If you are using the nuts, sprinkle them on the top.
  5. Bake for 15-20 minutes or until a toothpick stuck into the center of the muffin comes out cleanly.  Cool on wire racks.

Notes

One graham cracker sheet means the two square graham crackers before they are broken apart.  I used Nabisco Honey Grahams for this recipe.
