    The Best Pimento Cheese

    This easy recipe makes the best pimento cheese you have ever eaten. And this classic appetizer is just perfect for tailgate and holiday season!  Keep this recipe on repeat and make sure you have lots of crackers on hand!

    I need to start with a confession…I actually don’t like pimento cheese.  Or more specifically, I don’t like pimentos.  (I love and adore cheese.)

    But pimento cheese is the Southern husband’s all time favorite way to eat cheese, and my mama knows it.  So she regularly whips up a batch of her pimento cheese, which the Southern husband always says is the best pimento cheese in the world.

    And knowing how much pimento cheese he has put away over the years, this is high praise.

    So if you are a pimento cheese lover (or if you know someone who is), I have a super easy recipe for you, courtesy of my mama.  Let’s make it!

    But first, I can’t resist sharing this adorable picture of two of my very favorite people.

    Those smiles!  Those matching Clemson-colored outfits!  I love this picture even more than the Southern husband loves pimento cheese.

    Here’s how you make easy pimento cheese!

    And speaking of, according to my mama, you start with a small jar of sliced pimentos, which you chop up into little teeny pimento cheese pieces.

    Now mix those pieces up with some cheddar cheese, some mayo and a few other things, including the juice from the pimento jar, and pop it in the fridge for an hour or two.  Then all you need to do is put it in a pretty bowl, round up some crackers and call any pimento cheese lovers you have in the vicinity to come and get it.

    Ingredients

    Scale
    • 8 ounces grated cheddar cheese
    • 1/2 cup mayonnaise
    • 1 four ounce jar sliced pimentos and their juice
    • 1 tablespoon grated onion
    • Pinch of cayenne pepper
    • 1/2 teaspoon Worcestershire sauce

    Instructions

    1. Chop the sliced pimentos until they are in small bits.
    2. Mix all ingredients (including the juice from the pimento jar) together and let the mixture sit in the fridge for an hour or two.
    3. Transfer the pimento cheese to a pretty bowl and serve with crackers and/or chopped veggies.

      I was never that crazy about pimento cheese until I upped the amount of onion and reduced the pimentos by half. For the purists amongst us, it’s probably not pimento cheese any more, but that’s how I like it!

        And I support you in adjusting pimento cheese to the way you like it! For me, I would have to remove all the pimentos. The Southern husband would happily eat all of them! :)

      I would not eat it with a fox, I would not eat it in a box. I do not like pimentos. In fact, I don’t like ANY peppers (maybe it’s the repeat effect). My 93 yo. Texas aunt loves pimento cheese so I’ll share this recipe with her, but I’ll take my cheese plain. Thank you, thank you, KATE I AM!

      My husband is from Ohio, but he LOOOVes pimiento cheeze (so do I). We can get some good store-bought here in NC, but I’m going to try yours. It sounds perfect.

      Yum! I’m all for anything that has cheese! Maybe if you made this with Cabot’s bacon cheddar, you would be more inclined to eat some. ;) That pic of your mom and The Southern Husband is really great.
