Is there anything more holiday-tasting than chocolate and mint? And is there anything more wonderful than a warm and frothy cup of cocoa in your favorite holiday mug? Well, I’m here to tell you that in about 10 short minutes, you can have all of these things. It’s a holiday miracle! Let’s make it!
This recipe was inspired by my all-time favorite hot chocolate recipe, my beloved red wine hot chocolate (which I also fully intend to enjoy over the next week or two, followed by a bread and water diet so that I can still fit into my mother of the bride duds). In this case the red wine is replaced by your favorite mint chocolate chip ice cream.
In our house that actually means gelato, as in Talenti mint chocolate chip gelato. The Talenti folks have never heard of me, so this is my unbiased love for them coming through, and the Southern husband loves them even more. He has yet to muster the strength to walk by the ice cream section of the supermarket and not grab a container of Talenti gelato. But any mint chocolate chip flavor will work here, so you be you.
So here’s the deal: you are going to make a super easy cocoa out of whole milk, your favorite kind of chocolate, a little confectioner’s sugar and vanilla. When it is steaming hot and ready, you are going to float a small scoop of that mint ice cream on top, and you know what it’s going to do?
It is going to gently melt into minty, creamy, frothy deliciousness, cooling down your cocoa just enough to make it One Thousand Perfect. Now, I know you may be thinking that this sounds kinda rich, and you are right. So if you want to take a more modest approach, here’s what you do.

Ingredients
- 2 cups whole milk
- 4 ounces of dark, semi-sweet and/or milk chocolate – your choice!
- 2 teaspoons confectioner’s sugar
- 1 teaspoon vanilla
- 1 pint mint chocolate chip ice cream
Instructions
- Chop chocolate into small pieces.
- Heat milk in small heavy saucepan over medium high heat until it comes to a simmer.
- Whisk in sugar, vanilla and chopped chocolate. Continue whisking until chocolate is melted and smooth.
- Remove from heat and ladle into mugs or shot glasses, leaving about an inch of room at the top. Float a small scoop of ice cream on top.
- ENJOY!
Notes
You really can use any kind of chocolate you like in this recipe – dark chocolate, semi-sweet and milk chocolate all work equally well!
