Why we love this recipe ❤️

I do love me some hummus! And so does the Southern husband – if you ask him, I’m betting that he would say my speedy recipe for Five Minute Hummus would be in his top ten out of all the recipes on this site.

This recipe takes that creamy, dreamy hummus and puts it in some shallow bowls, covers it with shredded chicken and some fresh veggies, a little cheese and a drizzle of dressing for a speedy, protein and fiber filled scrumptious supper!

What is hummus? 🥣

Hummus is a creamy Middle Eastern dip made out of pureed cooked chickpeas, olive oil, lemon juice, garlic and tahini (otherwise known as sesame seed paste) usually served with a sprinkle of paprika on top.  It has a slightly thick consistency and just the right amount of texture. It’s heaven.

It’s a snap to make at home (and here is our favorite way to make hummus in five minutes!) but you can also use store-bought hummus – you can find it in your supermarket, usually near the dairy section.

And while I am a-ok with scooping it up just as is with a pita chip or a celery stick, I’m also always looking for ways to make a more Official Meal out of it. And so I am all about these chicken hummus bowls!

Ingredient notes and substitutions

  • Hummus: You can find this creamy chick pea spread in the refrigerated section of your grocery store, or you can make your own with this 5 minute hummus recipe!
  • Chicken: Any kind of cooked chicken will work. This is perfect for leftovers, but a rotisserie chicken is also great.
  • Feta cheese: This salty Greek cheese comes in blocks and crumbles…we recommend buying it in blocks and crumbling it yourself for the very best texture.
  • Capers: Look for these little pickled seed buds in the condiments section of your supermarket.

How to make this recipe 👩🏻‍🍳

STEP 1: Take a half cup of your favorite hummus and divide it between two bowls, spreading it out into a circle.

STEP 2: Scatter some cooked shredded chicken, cooked green beans, crumbled feta cheese, halved cherry tomatoes and a few capers between on top of the hummus.

Pro tip: if you don’t have any of your own cooked chicken on hand, a rotisserie chicken works great for this recipe.

STEP 3: Drizzle it all with a little olive oil and balsamic vinegar.  Grind some fresh black pepper on top (you can also add some chopped fresh parsley or lemon zest for a garnish if you like!) and serve it up!and serve it up!

Can I use any kind of hummus for this recipe?

One million percent yes! I’ve made this with everything from sweet potato hummus to traditional hummus and it is all scrumptious.

Can I make this ahead of time?

You can definitely make the components ahead of time (cooking the chicken and the green beans for example) but you should assemble it right before you serve it, which will only take you a few minutes.
