Creamy hummus makes a perfect bed for a flavorful combo of chicken, veggies and cheese in this recipe for Mediterranean chicken hummus bowls.

Ingredients

  • 1/2 cup prepared hummus – any kind!
  • 1 cup cooked shredded chicken
  • 1 cup green beans, cooked
  • ½ cup feta cheese
  • ½ cup cherry tomatoes, halved
  • 1 tablespoon capers
  • Olive oil for drizzling
  • Balsamic vinegar for drizzling
  • Fresh ground pepper

Instructions

  1. Divide hummus between bowls, spreading it out into a circle.
  2. Divide chicken, green beans, cheese, tomatoes and capers between bowls, scattering them all on top of the hummus.
  3. Drizzle with a little olive oil and balsamic vinegar. Grind some fresh pepper on top and serve!

Notes

  • Hummus: You can find this creamy chick pea spread in the refrigerated section of your grocery store, or you can make your own with this 5 minute hummus recipe!
  • Chicken: Any kind of cooked chicken will work. This is perfect for leftovers, but a rotisserie chicken is also great.
  • Feta cheese: This salty Greek cheese comes in blocks and crumbles…we recommend buying it in blocks and crumbling it yourself for the very best texture.
  • Capers: Look for these little pickled seed buds in the condiments section of your supermarket.
