This easy recipe for folded breakfast quesadillas features bacon, eggs and cheese for a festive and delicious start to your day!

I know, I went ahead and titled this one breakfast quesadillas, but I gotta tell you, this is one recipe that is frequently requested for supper in my house.
And really, who can blame them? A tortilla filled with bacon and eggs and cheese and salsa, all folded up and lightly fried to cheesy deliciousness? Yes please and thank you.
This is also a super recipe to use if you are cooking for a brunch crowd – you can assemble them ahead of time, and then fry them up at the last minute. I like using my trusty griddle for the frying part, but a nice large skillet will work just as well.
So if you want guaranteed attendance at your breakfast, lunch or dinner table, give these babies a whirl!

- Bacon
- Flour Tortillas
- Eggs
- Cheddar Cheese
- Salsa (optional)
- Sour Cream (optional)
Here’s how to make Folded breakfast quesadillas!
STEP 1: Cook the bacon in a large skillet or a griddle until done to your liking. Scoop out and drain on paper towels.
STEP 2: Whisk the eggs together until they are totally combined and then add them to the skillet with the bacon drippings. Cook until they are just soft set and then scoop them out and let them rest on a plate while you assemble the quesadillas!
STEP 3: Cut each tortilla halfway up in a straight line – I like to do this with a pizza cutter or kitchen scissors, and it should look like this…
STEP 4: Now divide the filling evening like this: One quarter of the quesadilla gets a spoonful of eggs…
one quarter gets bacon…
….one quarter gets cheese…
Fold as you go – starting with the egg part, start folding one section over the other until you have a triangle. Don’t worry if a little falls out – you can just smoosh it back in!
STEP 5: When you have your 4 triangles, put them in a large skillet or on a griddle and toast them until the cheese is melty and the outside is golden, about 3 to 5 minutes per side. You can either use a clean skillet, or if you want to walk on the wild side, you can cook them up in the bacon and eggs skillet!
Just look at that cheesy deliciousness!
More tips for making folded breakfast quesadillas!
You can try, but I gotta tell you that flour tortillas are softer, more pliable, and much less likely to fall apart or break during the folding process.
Yep! Shredded Mexican blend cheese, shredded Jack cheese or even mozzarella cheese will work just fine. You be you, cheese-wise!

Have you tried these with sausage (breakfast or chirozo) or mushrooms or perhaps fajita veggies (peppers & onions) for a veggie alternative?
We’re going “cabin camping” as our extended family to celebrate my hubby’s 70th. I’m thinking we might have a breakfast quesadilla bar where all could choose their protein and kind of cheese. Might have to try it out first!

Hi Cathy! I think any and all of these ideas would work fine! Just make sure the sausage is chopped up small enough.
