Folded Breakfast Quesadillas

This easy recipe for folded breakfast quesadillas features bacon, eggs and cheese for a festive and delicious start to your day!

Ingredients

  • 4 strips bacon, chopped
  • 4 large flour tortillas
  • 8 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup salsa (optional)
  • 1 cup sour cream (optional)

Instructions

  1. Cook the bacon in a large skillet or a griddle until done to your liking.  Scoop out and drain on paper towels.
  2. Whisk the eggs together until they are totally combined and then add them to the skillet with the bacon drippings.  Cook until they are just soft set and then scoop them out and let them rest on a plate while you assemble the quesadillas!
  3. Cut each tortilla halfway up in a straight line.  Now divide the filling evening like this: One quarter of the quesadilla gets a spoonful of eggs, one quarter gets cheese, one quarter gets bacon, and the last quarter folds over to close it up (check out the pictures above).
  4. Fold as you go! Starting with the egg part, start folding one section over the other until you have a triangle.  Don’t worry if a little falls out – you can just smoosh it back in!
  5. When you have your 4 triangles, put them in a large skillet or on a griddle and toast them until the cheese is melty and the outside is golden, about 3 to 5 minutes per side.  You can either use a clean skillet, or if you want to walk on the wild side, you can cook them up in the bacon and eggs skillet!
