    Easy Strawberry Peach Sorbet

    • Easy Strawberry Peach Sorbet

    Why we love this recipe

    I’m going to go on record right here and say it: I am anti-ice cream maker. 

    There’s something about making the custard (terrifying enough) and making sure the ice cream maker insert is frozen enough, and going through all the churning and never knowing for sure if you are going to end up with ice cream or a really sweet-tasting soup that makes me want to bolt for the nearest Dairy Queen. 

    But sorbet that you can make in your food processor in 10 minutes flat (after you freeze the delicious ingredients)?  Sorbet made of fresh strawberries and peaches?  Sorbet that comes out perfectly every single time?  Yup, I’m going to go on record right here and say I’m in!

    What is sorbet?

    Sorbet is a dairy-free frozen dessert made primarily from fruit, sugar, and water. It is pureed to create a smooth, icy texture. It is sometimes confused with sherbet, which is also made with fruit and sugar but does include some kind of dairy (and check out this super easy strawberry sherbet recipe!)

    Ingredients you need

    Ingredient notes and substitutions

    • Peaches: Local peaches are best if you can find them! Look for peaches that have a little give when you press on them.
    • Strawberries: Local strawberries are also the best! Look for a deep red color with no wet bits on the berries.

    How to make this recipe

    STEP 1: Lay some peeled and chopped peaches and chopped strawberries on a baking sheet lined with non-stick foil or parchment paper. Freeze them until they are solid – we recommend overnight!

    STEP 2: Place frozen fruit and sugar in food processor and process for about 5 minutes, scraping down sides occasionally.  Cover your ears, because the first minute or two is going to be LOUD.  You should stop the processor once or twice to scrape down the sides.It will seem grainy at first, but those are teensy ice pieces that will quickly melt into your sorbet once it’s done.

    And that, my friends, is it!  You will have a lovely, creamy, soft sorbet!  If you like your sorbet a little firmer, put it in a bowl and pop it in the freezer for an hour or two.  Peach strawberry sorbet heaven, and exactly no ice cream maker required!

    What is the best way to peel peaches?

    Bring a pot of water to a boil, and score the peaches with a sharp knife, breaking the skin from top to bottom so that your peach has 4 cut marks in it. Drop your peaches in the boiling water for 30 seconds, scoop them out and then run them under cold water. The skins will slide right off – it’s like magic!

    Can I use different fruits for this recipe?

    Yes! Blueberries, bananas, mangos, raspberries and watermelon all work great. Just make sure whatever you use is peeled (if necessary) chopped and frozen.

    Can I use frozen fruit for this recipe?

    We love local fresh fruit the very best, but frozen fruit will also work just fine, and cuts out a lot of the work!

    Can this recipe be made ahead of time?

    Yes! And it will keep for a few weeks in your freezer if it is tightly covered. Let it sit for about 15 minutes or so after to soften enough to scoop.

    Ingredients

    Scale
    • 3 large peaches, peeled, pitted and sliced
    • 1 pint strawberries, hulled and halved (or quartered if they are large). Local if they are in season!
    • 1/4 cup sugar

    Instructions

    1. Lay the fruit in a single layer on a cookie sheet lined with nonstick foil. Freeze overnight.
    2. Place frozen fruit and sugar in food processor and process for about 5 minutes, scraping down sides occasionally.  It will seem grainy at first, but those are teensy ice pieces that will quickly melt into your sorbet once it’s done.
    3. Sorbet will be soft after 5 minutes – if you like it firmer, place in a bowl and freeze for an hour or two.

      I do have a fairly intimate relationship with my ice cream maker, but I still love love love sorbets! This feels like it’s full of everything I love about summer.

      I can’t wait to try this! I hate digging out my icecream maker so I will do this in my Vitamix as I love making sorbet in it and it freezes directly in the machine. I will report back this weekend! Thanks……

      Oh, YUM. How Cool and refreshing this will be on a hot summer day and so easy to make.
      Hubby doesn’t care for peaches but who’s going to tell…………..not me. :} Don’t think he will ever know about the peaches if he doesn’t see me make this. :}
