This easy cheesy bacon pasta frittata combines pasta and veggies (and bacon!) in a kid-friendly one skillet supper that will have them asking for seconds!
Doesn’t that wedge of cheesy bacon pasta frittata look like a cheesy, bacon-y slice of pie? And between the pasta and the bacon and the cheese, it’s pretty much as marvelous as having dessert for supper, in my book anyway!
This is a fabulous way to use up any leftover cooked pasta (if that ever happens to you), but it is one million percent worth it to cook up pasta especially for this recipe.
Here’s how you make a cheesy bacon pasta frittata!
Once you have your hands on some cooked pasta (we like angel hair for this, but spaghetti works just fine too) you are ready to roll. Mix up some sour cream and eggs and a little cheese.
Next, cook up some bacon in an oven proof skillet, scoop it out, and sauté some baby spinach in the drippings. (Bacon drippings and spinach are a match made in heaven.)

Pour the cooked pasta and bacon into that skillet and toss. Now pour the sour cream mixture over the pasta mixture and toss again. Turn on the heat and cook on the stovetop until the edges juuuuuuuuuuust start to set, about three minutes.
Now! Sprinkle the rest of the cheese on top, pop it in the oven and bake it for 10 minutes.
Look at that cheesy deliciousness! Let it cool for about 5 minutes, then slice it into wedges, and tell the kiddos you are serving up spaghetti pie for supper.
They might not even notice the spinach!

Ingredients
- 10 slices bacon, chopped into 1 inch pieces
- 6 ounces angel hair pasta
- 6 eggs
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 9 ounces baby spinach
Instructions
- Preheat oven to 425.
- Cook pasta according to package directions and drain.
- While pasta is cooking, mix the eggs, sour cream and 1 cup cheese together in a medium mixing bowl.
- Cook bacon in a 10 inch oven-safe skillet over medium high heat until done. Scoop out the bacon and drain on paper towels, leaving the drippings in the skillet.
- Add the spinach and cook until wilted.
- Add the pasta and bacon and toss with tongs until everything is combined. Pour in the egg mixture and toss again. Cook over medium heat until the edges just start to set, about 3 minutes.
- Sprinkle the rest of the cheese on top, transfer to the oven and cook until the frittata is set, about 10 minutes.
- Remove, let cool for 5 minutes or so and then cut into wedges and serve!
