Watermelon Burrata Salad

This easy recipe for watermelon burrata salad is a delicious way to welcome summer with one of the season’s favorite fruits and everyone’s favorite cheese!

This couldn’t-be-easier recipe for watermelon burrata salad was born the way so many of my recipes are…by walking by both the watermelon and the burrata cheese in my supermarket and all of the sudden having a lightbulb go off in my head.

Because summer officially started last week, and with that my mind is spinning with thoughts of local tomatoes and corn, and firing up the grill, and eating supper outside, and salads with enough gumption that you can happily eat them as a main course.

So when that lightbulb went off, I knew I had found this season’s perfect summer salad.  Sweet, salty, creamy, summery deliciousness all in one watermelon burrata salad.  Let’s make it!

The Southern husband and I do love to officially kick off each season with An Event.  This year we did it by going to see Neil Diamond in concert at Madison Square Garden, and we started THAT off by finding the one place in New York City where you can lounge around on the roof in the sunshine on a sofa with your shoes off, enjoying a glass of wine.

There could be others.  But I like to think we found The Only One.

We then made our way to Madison Square Garden, where I obediently tweeted the concert hashtag (#tweetcaroline – get it???) and then THIS happened.

Yep.  There we are on the big screen.  The Kiss Cam.  We have officially made the big time. :)

Here’s How you make watermelon burrata salad!

Anyway, after all that excitement and when I was back in my own kitchen, I turned my attention to my watermelon burrata salad brainstorm.  I chopped up a quarter of a watermelon into nice little bite-sized cubes. Next I tenderly unwrapped a ball of burrata cheese.

For those of you who haven’t yet discovered the wonder that is burrata, it is basically fresh mozzarella with a creamy center, and it is now almost always available at the cheese counter of your supermarket.  If you can’t find it, a nice fresh mozzarella is a fine substitute.  But I’m hoping you can find yourself some burrata, because it is just plain heaven.

Toss the watermelon chunks with some mint and basil.  If the herbs are tiny enough you can leave them as leaves, or you can chop them up.  Or a combo of both.  My mint is growing up a storm at this point, so I had lots of tiny leaves.

Tear the burrata into pieces and nestle it in amongst the watermelon chunks.  Now drizzle everything with olive oil and sprinkle on some red pepper flakes.

And there you have your beautiful watermelon burrata salad!  Or as I like to think of it, summer on a plate!  What’s your go-to happy summer recipe?

Ingredients

  • 2 cups cubed watermelon
  • 1 large ball of burrata cheese
  • 1/2 cup basil leaves, chopped
  • 1/2 cup mint leaves, chopped
  • Olive oil for drizzling
  • Red pepper flakes

Instructions

  1. Gently toss melon and herbs and divide between two plates.
  2. Cut the burrata in half and pull it into bite sized pieces, nestling the pieces into the melon cubes.
  3. Drizzle with olive oil and scatter some red pepper flakes on top.

    This looks delicious! My summer go to recipe is steak and zucchini kabobs on the grill. I can’t wait to try this salad! It looks so easy, yet so scrumptious!

    i’ve only had burrata once but i thought it was amazing! what a great idea to pair it with something like watermelon that greatly benefits from something salty!
