    Strawberry Cheesecake Bites

    This easy recipe for strawberry cheesecake bites gives a bite-sized taste of creamy cheesecake, all nestled into a sweet juicy strawberry.

    It’s the most wonderful time of the year, and by that I mean our local farmer’s markets are exploding with gorgeous fresh fruits and veggies, just picked and ready to be enjoyed under the summer sunshine.

    And while local tomatoes will always be first in my heart, coming in a close second are those sweet, fragrant local strawberries.

    And while I am perfectly happy to just eat them by the handful all by their beautiful selves, I did recently save one batch back to concoct a version of one of the Southern husband’s favorite desserts.  He does love a good creamy cheesecake, and that along with having a box of local strawberries is how this recipe was born.

    Strawberries are obviously a key ingredient in this recipe, and here’s a handy guide to everything you need to know about buying, storing and prepping these delicious fruits.

    here’s how to make strawberry cheesecake bites!

    First you want to ever so gently rinse off your strawberries, dry them off with a paper towel, and then slice the top off just so you can see that little pink and white ring inside the strawberry.  Use that ring as a guide to core out the inside of the strawberry so you have a nice little container for your cheesecake mixture.

    Now drop some cream cheese, some powdered sugar and a little vanilla into a bowl and mix it all up until everything is creamy and fluffy.  I find that a hand mixer works best for this because we aren’t working with a large amount of ingredients here (but if you double or triple or quadruple the recipe, I take that back and feel free to use your stand mixer!).

    Now scoop out a little of that cheesecake deliciousness and fill up each strawberry.  If you want to be extra fancy you can use a frosting bag with a decorative tip, but if you use a spoon or a butter knife they are still going to taste just as scrumptious.

    Last but not least!  This part is optional, but if you want to get the taste of the traditional cheesecake crust in there, crush up a graham cracker square and sprinkle the tops of the berries.  Now here comes the hardest part.

    Put them in the fridge and wait for an hour until they are firm.  I KNOW, SO HARD!  But once the waiting is over, the strawberry cheesecake bite eating begins, and it will all be worth it.  Happy local strawberries, my friends!

    Ingredients

    Scale
    • 12 good sized strawberries
    • 4 ounces cream cheese
    • ¼ cup powdered sugar
    • 1 teaspoon vanilla
    • 1 graham cracker square, crushed into fine crumbs

    Instructions

    1. Rinse strawberries, dry and cut the stem and leaves off so that the pink and white ring inside the strawberry is visible.
    2. Using that ring as a guide, core out the inside of the strawberry.  Put the strawberries cut-side down on a paper towel while you make the filling.
    3. Put the cream cheese, sugar and vanilla in a mixing bowl and beat with a mixer until fully combined and fluffy.  A hand mixer works best for this because of the small amount being mixed.
    4. Fill each strawberry with the cream cheese mixer.  You can use a frosting bag with a decorative tip if you want to be super fancy, or you can just  fill them with a spall spoon or butter knife.  Either way will taste just a good!
    5. Sprinkle some graham cracker crumbs on the top of each berry and put them in the fridge for an hour or so to chill and get a little firmer.
    6. Now eat! Bet you can’t eat just one!
