This easy recipe for steak with chimichurri sauce adds a simple little sass to your supper with a quick parsley, garlic and olive oil sauce!

This is one of those recipe that is SO fast and SO easy that it almost doesn’t seem fair to call it a recipe, but I’m a recipe writer so I’m going to call it that anyway.

In other words, the next time you get a hankering for steak, take the 5 minutes you’ll need to spend on making this delectable chimichurri sauce and take your steak dinner to all new heights!

What is Chimichurri sauce?

Chimichurri is a South American sauce that is a puree of fresh parsley, garlic, olive oil, vinegar and a little salt and pepper. Think of it as a slightly spicier version of pesto. It comes together in no time flat in your food processor.

Fresh parsley, which is available in your supermarket produce section pretty much all year round, is a must.

ingredients needed for this sassy steak sauce!

  • Steak
  • Fresh Parsley
  • Red Wine Vinegar
  • Garlic
  • Salt
  • Red Pepper
  • Olive Oil

here’s how you make Chimichurri sauce for Steak!

STEP 1: Season your flank steak with salt and pepper and grill to your liking, about 5 minutes per side for medium rare.  Take it off the grill and let it rest under a piece of foil while you are making the sauce!

STEP 2: While steak is resting after being grilled, make chimichurri sauce: add a cup of fresh parsley, a tablespoon of red wine vinegar, a peeled clove of garlic and a pinch of salt and pepper to your handy food processor and process until parsley and garlic are well-chopped.

STEP 3: Add a half cup of olive oil in a steady stream through processor tube until the sauce is a nice thick consistency.

STEP 4: Slice steak against the grain, and garnish with sauce – or pass the sauce around and let your diners garnish their own!

Can I cook steak in the oven or on the stove instead of grilling it?

You can! You can do it either way. For both methods, your best bet is a cast iron skillet. Heat it up on your stovetop over high heat, or in a 450 degree oven until it is HOT. Carefully add the steak and cook for about 5 minutes per side or until it is done to your liking…the best way to figure that out is with a meat thermometer. You are looking for 145 for medium rare all the way up to 170 for well done.

Can I use a different cut of steak?

You can! Strip steaks and skirt steaks and hanger steaks are all great with this topping. And honestly, it goes great on a burger too. 😀 🍔

Can I use chimichurri sauce for anything besides steak?

Yes, yes, a million times yes! It’s great on chicken or fish, or even in a potato salad! So if you have any leftover, save it!

Ingredients

  • One flank steak, about 1.5 pounds or so
  • 1 cup fresh parsley
  • 1 tablespoon red wine vinegar
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper
  • 1/2 cup olive oil (more as needed)

Instructions

  1. Season steak with salt and pepper and grill to your liking, about 5 minutes per side for medium rare.
  2. While steak is resting after being grilled, make chimichurri sauce: add all ingredients except olive oil to food processor and process until parsley and garlic are well-chopped.
  3. Add olive oil in a steady stream through processor tube until the sauce is a nice thick consistency.
  4. Slice steak against the grain, and garnish with sauce.
