    Sesame Lime Rice

    This easy recipe for sesame lime rice takes a simple side dish to a whole new level with the zingy flavor of lime zest and a hint of sesame. The perfect accompaniment to any main course, especially fish and chicken!

    I promise that ultimately I will get to the recipe for this zingy sesame lime rice, which is one of our favorite little side dishes and which you definitely need to have in your side dish repertoire, but in MUCH MORE EXCITING NEWS…we got a sneak peek at the wedding pictures from our incredible, amazing, super-talented photographers, Steve and Cat at Dove Photography.

    And so here is a little sneak peek for you too.  I am literally in happy tears all over again at these incredible moments that Cat and Steve captured.

    I had to start with that one, because that is literally seconds after they walked down the aisle and out of the church, and it so captures the love in their hearts.  But before that was the trip to the church with our baby girl…

    I could go on and on, and I’m sure I won’t be able to resist sharing more in the days and weeks to come, but here’s just one more…

    If you are looking for a wedding photographer, I can’t say enough about Cat and Steve.  Not only did they capture the joy of the day, they are also two of the nicest people I’ve ever met.  Click here for their website.  Steve and Cat – you are AMAZING.

    And since we still do have to eat even amidst all this wedding bliss, let me tell you about this sesame lime rice.  You cook up rice however you like to cook it (I love making mine in the Instant Pot, but however you like to cook it will work just fine.)

    Then stir in some sesame oil, sesame seeds and lime juice.  Garnish with a few more sesame seeds and some lime zest, and you have the perfect side dish for your favorite seafood, chicken or meat dish.  I do love a good reliable side dish.

    BUT NOT AS MUCH AS I LOVE THESE PICTURES.  Happy sigh!

    Ingredients

    Scale
    • 1 cup long grain rice (we like basmati!)
    • Pinch each of salt and pepper
    • 2 tablespoons sesame seeds
    • 1 tablespoon sesame oil
    • Zest and juice from one lime

    Instructions

    1. Cook rice by bringing 1 1/2 cups water to a boil and adding rice, salt and pepper.  Turn the heat down to a simmer, cover pot and cook until done, about 15 minutes. (See note below for all you Instant Pot users!)
    2. Add one tablespoon sesame seeds, sesame oil and the lime juice to the cooked rice and stir.
    3. Garnish with remaining sesame seeds and lime zest and serve!

    Notes

    I love cooking rice in my Instant Pot!  Here’s a link for making it right in the Instant pot, and I also love this “pot-in-pot method – it’s my favorite way to cook rice.

      So happy you are sharing glimpses of THE Day with us! They are such a darling couple! Best wishes to them! And this rice (cuz we eat, too!) sounds really good! I may take some liberties with your recipe and add a few snips of green onion, just for a little zing. Keep the wedding pics coming!
