Creamy Shrimp and Veal Pasta

This easy recipe for creamy shrimp and veal pasta is the perfect dinner party main course.  Just don’t tell your guests how simple it was to throw together – just stand back and let the compliments roll in!

Creamy Shrimp and Veal Pasta

As you know, my goal in life in the kitchen is to turn out scrumptious meals that are easy and different, but that also don’t require hours and hours of time in front of my stove. I love my stove, but I love my family and friends even more, so that’s why I also love this particular recipe.

It’s fancy but easy, elegant and quick, and it is a one dish conglomeration of tender shrimp and veal, pasta and asparagus, all in a dreamy creamy sauce.  Can you say, perfect holiday dinner?  Let’s make it!

You can make this with any kind of pasta you like, but I think linguine and spaghetti are perfect for twirling up that sauce.

While the pasta is cooking, you are going to sauté up some boneless veal scallops, and then cook up the shrimp and asparagus in the drippings from the veal.  (I know!!  Such flavor!!)

After that, all that’s left to do is make a quick sauce out of sherry and a little cream, combine everything together, and then dish it out onto the plates of your very lucky diners.  I like to throw a sprig or two of fresh thyme on top, just for the prettiness of it all, but that’s totally optional.

This is ready in such a snap that you will have loads of time for everything else that you may be running around doing this time of year.

It’s based on the equally fabulous novel by my friend Julie Murphy, and I promise you will love it even more than this dreamy, creamy shrimp and veal pasta.

Description

This easy recipe for creamy shrimp and veal pasta is the perfect dinner party main course.  Just don’t tell your guests how simple it was to throw together – just stand back and let the compliments roll in!


Ingredients

  • 8 ounces thin pasta (linguine, spaghetti, etc)
  • 4 boneless veal cutlets
  • 1/2 cup flour
  • 1 egg, beaten
  • 4 tablespoons butter
  • 12 shrimp, peeled
  • 1 bunch asparagus, cut into 1 inch pieces
  • 1/4 cup sherry
  • 1 cup heavy cream
  • Salt and pepper
  • Fresh thyme for garnish (optional!)

Instructions

  1. Cook pasta according to package directions and drain.
  2. While the pasta is cooking, put the flour and the egg in separate shallow bowls.  Dunk the veal in the flour, then the egg, then the flour again.
  3. Melt the butter in a large deep skillet over medium high heat.  Cook the veal for 90 seconds per side (veal cooks super quickly!) and set aside.
  4. Add the shrimp and the asparagus to the skillet and stir until just cooked through, about 2-3 minutes.  Scoop out and set aside.
  5. Add the sherry and cream to the skillet along with a pinch each of salt and pepper and simmer for 2-3 minutes.  Now put the pasta, shrimp and asparagus back in the skillet and toss until everything is coated.  Add the veal and toss again.
  6. Divide among plates, garnish with thyme and serve at once.
