Baked Hot Chocolate Mugs

This easy recipe for baked hot chocolate mugs takes everyone’s favorite sweet winter drink and turns it into cake!

Baked Hot Chocolate Mugs

Remember when you were a kid and you would be outside in the snow for hours, sledding and making snow angels and generally clowning around until your mittens were caked with snow, and you couldn’t feel your ears, and there was melted snow in your snow boots?

And you would go inside and by the time you had peeled off your snowsuit and your damp socks and your hat with the pom-poms and your hair was wild with static electricity and your nose was bright pink and you were out of breath from dragging the sled up the hill 500 times and screaming with excitement all the way down,  your mama had a cup of hot chocolate with marshmallows melting on top all ready for you?

Yep,  I remember that.

So, what if you could recreate that perfect cup of hot chocolate, but instead of finding hot cocoa under the marshmallows, you spooned up a perfect bite of warm, slightly creamy baked hot chocolate mug cake instead?

Wouldn’t that be almost like the sheer wonderfulness of being a kid on a snow day with nothing to do but play in the snow with your friends and then come inside to a chocolate treat made by your mama?

I think it would.

And speaking of mamas, look at what just came in the mail for our newest family member?

The Southern daughter had asked if maybe she could knit up a purple and orange blanket for Winnie, and that, my friends, is the sweetness that happened.

That’s not a festive orange and purple yarn MIXTURE that she found – nope, my mama somehow magically knitted some purple yarn and some orange yarn TOGETHER to make the world’s coziest puppy blanket.

Meanwhile, back at this delectable wintertime treat…

Here’s how you make baked hot chocolate mugs!

First you need oven-safe mugs. Eight of them, please, and preheat your oven to 375.  

Take two tablespoons of butter and grease the inside of the mugs.  Put a teaspoon of sugar into each mug and shake it around until the sugar sticks to the butter.

Put 8 more tablespoons of butter and 10 ounces of chocolate chips into a double boiler (or a bowl over simmering water works just fine too) until the chocolate is melted, stirring every now and then. Set the bowl aside to cool while you do the next step.

Use a mixer to beat 4 eggs, 1 egg yolk, a teaspoon of vanilla and 1/2 cup sugar until everything is well combined.

Stir 3 tablespoons of flour into the melted chocolate. Now slowly add the chocolate mixture to the to the egg mixture, beating on low until everything is fully combined.

Spoon the hot chocolate batter into each cup until it is almost but not quite full. Put the mugs on a rimmed baking pan and bake for 15 minutes – the cake will be a little puffy.

Now for the best part! Remove the tray from the oven and cover each cake with mimi marshmallows. Put the pan back in the oven until the marshmallows start to turn golden, 2 to 3 minutes or so.

Shake a little cocoa powder on top, cool for a few minutes and serve them up!

Ingredients

  • 10 tablespoons butter
  • 8 teaspoons sugar

  • 1 cup mini marshmallows
  • 1 tablespoon sweetened cocoa powder (optional)

  2. Put the 8 remaining tablespoons of butter and the chocolate chips into a double boiler or a bowl over simmering water until the chocolate is melted, stirring every now and then. Set the bowl aside to cool while you do the next step.
  3. Use a mixer to beat eggs, yolk, vanilla and 1/2 cup sugar until everything is well combined.
  4. Stir the 3 tablespoons of flour into the melted chocolate. Now slowly add the chocolate mixture to the to the egg mixture, beating on low until everything is fully combined.
  5. Spoon the hot chocolate batter into each cup until it is almost but not quite full. Put the mugs on a rimmed baking pan and bake for 15 minutes – the cake will be a little puffy.
  6. Now for the best part! Remove the tray from the oven and cover each cake with marshmallows. Put the tray back in the oven until the marshmallows start to turn golden, 2 to 3 minutes or so.
  7. Shake a little cocoa powder on top, cool for a few minutes and serve them up!

    Um….yes please! And your outdoor-playing-in-the-snow memory? Spot-on for me, too! Did you get to wear bread bags on your feet inside your boots to help with….I don’t even know what. That was something our mom had us do. These hot chocolate mug cakes look amazing! And Winnie’s new blankie is perfect! Your mama is very talented.

    I make mug cakes in the microwave in 90 seconds. But I’ve tried adding marshmallows & they tend to overflow. Your mother is very talented. I have a granny-square quilt that my grandmother crocheted for me over 50 yrs ago.
