Flaked Salmon with Sesame Noodles

Tender flaked salmon, spicy sesame noodles and crunchy romaine come together for a delicious and healthy supper!

Ingredients

  • 1 pound boneless salmon filet
  • 4 tablespoons sesame oil
  • 8 ounces linguine or spaghetti
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 4 tablespoons vegetable oil
  • 2 tablespoons rice or white wine vinegar
  • A couple shakes of hot sauce
  • 1 cup chopped romaine lettuce
  • Black or regular sesame seeds for garnish (optional)

Instructions

  1. Preheat oven to 425 and line a rimmed baking sheet with foil. Place the salmon filet on the baking sheet and tuck the thin end underneath so it is all the same width. Baste with 1 tablespoon sesame oil and roast for 15 minutes.
  2. Meantime, cook pasta according to package directions. Save 2 tablespoons of pasta water and drain.
  3. Put remaining sesame oil, soy sauce, sugar, vegetable oil, vinegar, hot sauce and pasta water in a bowl and whisk together. Add hot pasta and toss gently with tongs until coated with the sauce.
  4. Using two forks, gently pull the salmon into flakes.
  5. Divide pasta among plates and top with salmon flakes and lettuce. If you have them, sprinkle some sesame seeds on top. Drizzle with a little of the pasta sauce and serve.
