Cinnamon Butter Muffins

This easy recipe for cinnamon butter muffins is like the love child of cinnamon toast and a sweet buttery muffin. The perfect brunch or teatime treat!

Ingredients

  • 6 tablespoons butter
  • 6 tablespoons shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1 cup milk
  • 3 cups flour
  • 4 teaspoons baking powder
  • 1 cup butter, melted
  • 1 cup sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350. Grease a 12 opening muffin tin.
  2. Cream 6 tablespoons butter, shortening and 1 cup of sugar together.
  3. Beat in the eggs and nutmeg.
  4. Whisk the flour and baking powder in a separate bowl. Stir in flour alternately with milk into the butter mixture until the everything is just combined.
  5. Fill muffin tins 3/4 full and bake for 20-25 minutes.
  6. Combine remaining sugar and cinnamon in a bowl.
  7. When the muffins are done, cool for 5 minutes and then transfer them to a cooling rack.
  8. Dunk the top of each muffin in the melted butter and then roll in cinnamon sugar. (You can also do this with the whole muffin if you are feeling especially cinnamon sugary.)
  9. Make sure you eat the first one warm. It will make everything right with the world.
